I have struggled in the past year with evening meals, trying to serve something healthy, not too expensive when you are using organic meats etc, something that is easy to prepare, something that everyone really enjoys. It has been such a sore issue, I've been praying for a bit of inspiration and direction I feel as though my prayers have been answered with two casserole receipes, one is a lamb dish the other a chicken dish. We tend to alternate them fairly regularly. I cook both in a big frypan with deep sides. You could serve with rice to bulk the meal out further - we serve 7 with this, but we do have a couple of young ones.

Here they are, someone else might like them:

LAMB CASSEROLE

800g of BBQ Chump Lamb Chops (with a bit of fat and bone in it) - this works out to be 4 big chops
1 big onion diced
3 Cloves of garlic (we like it here )
Olive oil for frying
(Chop lamb up into smaller pieces, brown in pan with oil and throw in diced onion and garlic and fry together)
I then add a frozen bag of homemade chicken or lamb stock - 1 cup.
One tin of crushed tomatoes
One tin of kidney beans
Basil, oregano and salt to taste.
A good handful of green olives
1/2 a capsicum diced
1 big or 2 small zuchinni's to add some healthy green to it.
(optional: mushrooms)

This takes about 30 to 40mins all up to prepare and cook.

CHICKEN CASSEROLE

800g of thigh chicken cutlets (with some skin and one bone in the centre)- this works out to be 5 cutlets
1 large onion diced
Olive oil to fry with
(Cut the chicken into smaller pieces and fry with the onion in oil)
I then add a frozen bag of homemade chicken stock - 1 cup.
Salt and appropriate herbs to taste.
2 to 3 Tablespoons of sour cream
one tin of butter beans (or some other white bean)
1/2 green apple chopped
1 large carrot diced up
3 or 4 yellow squash diced
a handful of chopped mushrooms

This also takes the same time to prepare and cook.

Dear Anne,

These both look like very yummy hearty winter dishes - and one pot cooking at that - my kind of cooking. I will certainly be giving these both ago. I may have to wait until after camp.

I made the cookies and they turned out very nice. I left the chocolate quite chunky which turned out better that I thought it would. I gave most of them away as Easter gifts, they were a real hit. The rest were a little brown so I save them for a cup of tea after the Easter vigil just for us at home. Our little treat.

I have to giggle! You browned a few too? I browned SO many batches! I feel like I've been cooking FOREVER!    I get distracted, I take a phone call, I get busy with something else and I forget...   ....and then the smell finally brings me back to reality.....

Capsicum...maybe you call it a pepper? We call little, hot chilli's, peppers. But I have a vague memory you might call it this.. They can be red or green, I use the red. It is about the size of a person's hand.
