I'm not sure if I am posting in the right forum but I am looking for some interesting salad recipies. We are trying to increase the percentage of raw in our family's diet due to various health issues. However I have several "fussy" eaters and ones that balk at a "just another bland limp lettuce leaf"(a quote from one family member). So i am thinking I need to address dressing issues and what to put in that makes it a salad they'll "come back for more for". Hoping someone can offer some ideas that have worked in their families

Here are a couple we've enjoyed....
Romaine, craisins, chopped walnuts, grated swiss cheese topped with a garlic-y dressing (we like a locally produced one but have used a bottled one too--Kraft Garlic Expressions I think)
Greens (your choice), cashews, swiss cheese cubes and chopped apples (when we've used Honey Crisp apples they don't brown as easily)...topped with a homemade poppy seed dressing...can post recipe if you'd like; we've also used a bottled poppyseed in a pinch.
I can't wait to see some of the other suggestions...I get tired of our same old salad here.....the ones above don't get made nearly as often as I'd like it seems!

How funny that I was just thinking about gathering new salad recipes while rocking my sick baby!
Marie, Mary R. makes some REALLY good salads, I was thinking of calling her for some recipes. If any of you have recipes for homemade dressings, I'd LOVE to have them!
One we like is baby spinach, avacado, strawberries, red onion, toasted almonds and poppy seed dressing. I've also learned that buying good produce from a produce market rather than the grocery store makes for much better salads. (Marie, we do Monnettes!)

I have a delicious dressing recipe I got from a friend. It's very easy and all my kids love it!!!
1 cup mayo
3/4 cup buttermilk
1/4 onion, minced
1 garlic clove, minced
1 tsp. parsley
salt and pepper to taste
Ditto on the baby spinach, romaine lettuce, tomatoes, and cucumbers.

Our favorites:
Sliced tomato, cucumber, and fresh buffalo mozzarella sprinkled with basil, oregano, garlic powder , salt and pepper, then drizzled with extra virgin olive oil and red wine vinegar. Yum!
Baby spinach with mandarin oranges, cherry tomatoes, broccoli, topped with slivered almonds, chow mein noodles, with sesame ginger dressing.
Chicken Ceasar salad. (The ususal romaine, parmesan, croutons and Ceasar dressing.) We add tomatoes and then top with grilled seasoned chicken strips)
ANYTHING topped with my new favorite dressing: Annie's Naturals Shiitake and Sesame Viniagrette This is good stuff!

Mixture of lettuces,cherry tomatoes, scallions, carrots, celery and carmelized sliced almonds with a sweeter vinegrette dressing made with parsley.

This is a salad/layered dip option, which you can eat as a salad, or use chips, which the kids might enjoy.
1 ½ cups sour cream
¾ cup thick and chunky salsa (combine these two)
1 can (15 oz) black beans, drained and rinsed
1 large green bell pepper, diced
2 medium tomatoes, diced
½ cup thinly sliced green onions, with tops
1 package (16 oz) lettuce salad mix (10 cups)
1 cup (4 oz) shredded cheddar cheese
Corn chips (optional)
(For a hearty dish, add 1 ½ cups cooked/diced chicken)
Layers:
Beans
pepper
salad mix
tomatoes
green onions
Sour cream and salsa mixture (it will be pink!)
Grated Cheese
HTH!

We do a version of Marie C's that's a big hit here:
Baby Spinach (or you can use Romaine)
Cubed Cucumber
Sliced Strawberries
Shredded Parmesan Cheese
Sliced Red Onion
Cashews or Toasted Almonds (add after dressing)
Dressing:
2T White Wine Vingear
1/3 c. sugar (or you can use 1/4 if you're watching sugar)
1 T Vegetable Oil
1 t. poppy seed
2 T. lemon juice (I just use one lemon)

Thanks for all the ideas, its been very helpful!Here is one of our favorites:
Put grated granny apples and carrots in some cider vinegar and crushed garlic.
Add finely chopped silverbeet or spinach and celery and a few chopped spring onions
Just before serving can add a small handful of raisins or a chopped orange.

A fun variation for salads is to provide a big bowl of greens (we prefer red leaf or mixed baby greens), and fill a multi-section serving container with toppings, for a mini salad bar.
Possible toppings:
Dried cranberries, cherries or raisins
Mandarin oranges
Sunflower kernels
Almonds (sliced or slivered)
Kidney or garbanzo beans (rinsed)
Croutons
Sliced onion and/or peppers
Cherry or grape tomatoes
Diced cucumber
Olives
Bacon bits
Feta or shredded cheese (provolone or italian blend are nice)
Assortment of dressings
A favorite combination: Red leaf lettuce, sliced almonds,
dried cranberries, feta or shredded provolone with lite catalina or lite three cheese ranch....yummmm.

Last night's salad which received rave reviews:
Lettuce
cucumbers
cherry tomato
red pepper
green pepper
pepperocini
olives
roasted (or pickled?) red peppers (came in the olives)
red onion
feta cheese
Lemon and Olive oil and a splash of vinegar drizzled over all
Hard boiled eggs are tradional with this but I subbed golden crab last night since we had some left. Kind of a waste of good golden crab as everything else was so flavorful but I didn't have enough crab left to do much else with other than a salad.
This is like a Salad Carnival! Just what I needed to revitalize our own raw foods intake, Alison.

A really great, easy salad is raw spinach, craisins, sunflower seeds and Ken's Raspberry Pecan dressing (which is fat free) -- this is an amazing salad as my kids who won't eat raw spinach love the taste combination!
I think you're safe to put dried fruit/nuts into almost any kind of salad and it will work .... least that's the consensus around here.

Here is a yummy salad, and I think, if you wanted to make it a main course, you could add grilled chicken to it.
Mandarin Salad
Store no longer than 24 hours. Makes enough for 4-6 servings.
Dressing:
1/2 tsp. salt
dash pepper
2 tbsps. sugar
2 tbsps. vinegar (I have used balsamic vinegar with this and it is really good, too.)
1/4 cup salad oil
dash red pepper sauce
1 tbsp. parsley
Salad:
1/4 cup sliced almonds
1 tbsp. plus 1 tsp. sugar
1/4 head lettuce
1/4 head romaine
1 cup chopped celery
2 green onions, thinly sliced
1 can (11 ounces) Mandarin orange segments (added at end)
Directions:
Shake dressing ingredients in tightly covered jar; refrigerate.
Cook almonds and 1 tbsp. plus 1 tsp. sugar over low hear, stirring constantly, until sugar is melted and almonds are coated. Cool and break apart. Store at room temperature.
Tear lettuce and romaine into bite-sized pieces (about 4 cups.) Place greens in plastic bag; add celery and onion. Fasten bag securely and refrigerate.
*5 minutes before serving, pour dressing into the bag; add 1 can (11 ounces) mandarin orange segments, drained. Fasten bag securely and shake until greens and oranges are well coated. Add almonds and shake.
Serve

Marie, I had forgotten about it too, until this post came up! Thanks Alison!
We had this at my "almost sister's" house, about 15 years ago! I got the recipe and made it for quite some time, then packed it away, when we moved 10 years ago, and forgot about it! I will be looking for a nice spring day to make it, although we just had snow last night!

This was a great thread. I just made a list of possible salad ingredients and stuck them on the inside of my cabinet. Thanks everyone!
I thought of this thread when I read this post on Lissa's blog about a way for moms to eat more salads on a regular basis. Having a "salad bucket" in the fridge with everything in one place.
I used to do this before I got married....my roomate and I would cut everything up on Sunday night. Funny how you forget some of these good habits when entering motherhood!

One of my burning desires is to find out what Elizabeth Foss does to make a "Good salad". Too many times it's been mentioned about the "Foss salads".
Could you share your secrets, Elizabeth? I need a jumpstart on enjoying and making salads again.
