Easy chicken or turkey tacos:

Small flour tortillas, or corn if you're allergic to flour.
One or more packages of chicken or turkey that is pre-cooked and cut-into-strips (Butterball and some other major brands now sell poultry like this)

Optionals:
Shredded lettuce
Chopped Tomatoes
Shredded Cheese
Salsa
Chopped Onion
(these options can be endless)

Warm poultry if desired. Serve on soft tortillas for quick tacos. Top as desired. They are really good.

I got the idea from going to a Baja Fresh once.

Okay, ladies, here it is!

Tzatziki
1 pint plain yogurt, drained for a few days in the fridge
1 large cucumber, peeled, seeded, and shredded
2 cloves garlic, minced
2tbsp olive oil
1 1/2-2 tbsp white vinegar
salt and white pepper
(Dh sometimes adds a tsp of mint, as well)

Drain the yogurt for a few days--we use a fine mesh colander lined with a few layers of paper towels--cover it well, so it doesn't get crusty on top. You'll need to have a good sized bowl underneath, and probably will need to dump the liquid off at least once, maybe twice. This will cut the volume of the yogurt, so once you've made it a time or two, you'll probably want to double the recipe, as you'll have gauged the time you need to drain it thoroughly (you know it's well drained when you plop it out into a bowl and it holds it's shape and the imprint of the paper towels, lol).

Shred the cucumber and press the liquid out VERY well. It won't take much, but just make sure you get the water out. Add the cucumber, garlic, oil, and vinegar to the yogurt, salt and pepper to taste. Let it set in the fridge for AT LEAST one hour (over night is better) to let the flavors "marry".

This is great as a veggie dip (mainly cukes and tomatoes around here), pita dip, or on the mentioned gyros.

Oh, for those with more dc than the average...lol...which is most here, lol....I'd recommend doubling it straight off. Cause one batch won't last ANYTIME. We doubled it last time (doubled it, at least--we used one of those big things of yogurt, and another of the smaller pint sized) and we BARELY had enough for our meal with four adults and the three dc (the dc barely ate that much--it's the older folks you have to watch out for!).

Thanks for the tzatziki recipe, Rachel! I'm looking forward to trying it someday. And thanks to you all I have a list of new quick meals to try. Keep the suggestions coming if you think of more.

As for this evening, dh called to say that I don't have to worry about dinner because he's bringing home leftovers from a round table luncheon he hosted at work today.

Well, glad I could be of help. It's actually NOT difficult to make (shedding cukes is fairly easy--just cut them in half lengthwise after peeling, use a spoon to seed them, and then cut the halves into halves again. Then shred. They shred quickly cause of all of the water content...
