Hi,

I was wondering if you would share your top 5:

Veg. side dish & Fruit side dishes or whatever sides that you serve with your meals.

I can think of (or whatever is on sale ) meat dish but I am getting bored with my side dishes.

Our sides are usually salad. This time of year, when not much is in season, I usually buy spring greens and add a handful of dried cranberries or cherries, feta cheese, toasted and/or sugared nuts, and/or hard-boiled eggs.

Fresh cranberry sauce (buy extra at Christmas to freeze--sorry it's too late now    )

Brown or white rice

Tossed salad

Fruit salad

Corn or Peas or Fresh cooked carrots

These are our top 5 but not very inspiring. To round out our top 10 I'd add Carrot, Apple and Raisin slaw, Caramel Apple Salad, Tator tots, Baked beans and Sliced Oranges

Favorite side dishes:

Broccoli- prepared in the microwave and seasoned with a little olive oil, salt and pepper.

Green beans- boiled until crisp tender, then sauteed in a little olive oil and butter and seasoned with some soy sauce and salt and pepper to taste.

baked sweet potatoes- with butter, brown sugar and cinnamon.

rice pilaf

roasted vegetables -broccoli, carrots, cauliflower and squash seasoned with soy sauce, salt and pepper.

mash potatoes

roasted potatoes or roasted sweet potatoes

Up until recently, my side dishes were always the same, and very boring. Green salad. Frozen veggies (broccoli, green beans, corn, mixed vegetables) cooked in a little bit of water in the microwave. Sometimes rice or cornbread. Very infrequently, baked potatoes.

Newer additions that my kids love:
* Cornbread casserole (yum!)
* Green beans sauteed in a pan with olive oil and lots of garlic
* Garlicky mashed red skin potatoes
* Roasted potatoes (cut up and lightly covered in olive oil and garlic and herb seasoning before cooking)
* White rice cooked with powdered chicken bouillon in the water (it's a bit like rice-a-roni that way)

I'm beginning to think that I can add garlic to anything and my family will like it.

I will add that in the summer, fresh fruit salad is always a hit!

Roasted red potatoes (toss with olive oil, salt, pepper and Provencal seasoning and/or parmesan cheese, then bake at 450 for 20 minutes)

Roasted brussels sprouts (same as above, minus the seasoning and cheese -- just salt (and pepper if you want) will do. You do need to check these and move them around on the pan a bit during cooking to prevent them from burning)

Couscous

Green beans

Rice with plain yogurt and salt

Roasted Cauliflower-
Break cauliflower into florets and toss with some olive oil and salt.
I try to use as little oil as possible.
Spread on a cookie sheet--lining it with parchment or foil makes clean up a breeze.
Pop in a 400 oven for 15 minutes. Turn cauliflower to cause even browning--carmelizing. Keep cooking so browning is even. Sometimes about 30 minutes total.
4 of us can go through a head of cauliflower in a meal, fortunately it was on sale tonight.
It is even good cold but I love cauliflower-raw, soup, steamed, sauteed, in a pasta sauce with garlic and mozarella ( Moosewood cookbook)...

Raw veggies and fruit at lunch and dinner. Ranch dressing is a favorite dip for the veggies and vanilla yogurt with a cinnamon sprinkle is good for the fruit.

Cream ( actually pureed veggetable) soup with croutons or dried bread crisps.
I use up left over vegetables (careful with brocolli and green beans) in a chicken or veg. broth topped with croutons as a first course. I have been know to sneak in some tofu and a few dried beans to boost protein.
DD#2 cannot pick out the cooked vegetables and she will eat almost anything with a bit of grated Roamno cheese. Everyone gets their vegetables and we spend more time at the table.

Baked butternut squash.
Pierce the skin and place on a cookie sheet. Bake until soft. Cool a bit. Skin and seed. Mash with a bit of salt and butter if you wish. I make this ahead and reheat in a double boiler or in a buttered casserole dish--depending on how I am cooking the rest of the dinner.

Baked Acorn Squash halves with brown sugar and butter in the cavity.

Sure. Assuming four servings, basically you put your veggie and about 1/3 cup of water, 1 TBSP of fat (butter or olive oil) and a bit of salt in a covered skillet and bring that to a boil. Cover the skillet and steam the veggies until they are just tender. Then remove the lid, add seasonings and continue to cook until all the water evaporates, and then saute for 1-2 minutes.

Along with the cooking techique the author gives suggestions for veggie and spice combinations. Broccoli, garlic and red pepper flakes; broccoli, garlic, ginger and orange zest; brussels sprouts and dijon mustard; carrots with nutmeg.

How to Cook without a Book has been a great cookbook for me. I've really loved it and I use it all the time.

Thanks, Patty. It sound similar to what I've done with the garlicky green beans, but I haven't added water to do the steaming. I'll have to try it this week.

My husband is half Lebanese and yogurt with rice is a staple there. It sounds weird, but tastes really good. It actually works as its own meal if you add spices. Perfect comfort food when you're not feeling well and nothing else will stay down. To the extent I use it as a side dish it is usually with some kind of middle-eastern meat-based main dish.

Like Theresa I'm getting bored with some of ours, too, and also could use new ideas.

Rice
Mashed potatoes (whenever we have anything I can possibly make gravy from)
Refried beans (since we have Mexican quite a bit, refried beans are a staple side and I've just strated making my own again instead of doing canned)
Twice-baked potatoes - yummy, always a hit
Garlic green beans (like grandma used to make)
