Jeanne (9) does fine with all the food--she's a wanna-be vegetarian plus she's a "pleaser" and would probably give anything a try. Matthew (7) usually just eats whatever the meat in the dish is and a small portion of what goes with it--he would never have touched a vegetable, but seeing daddy eat it is having an impact on him. Timmy and Sarah (5 and almost-3) eat a lot of mac& cheese . Their pickiness predates the Cooking Light recipes, though, so I don't feel badly. Cooking Light trades fat and calories for flavor, and some of the things are too spicy for my children (although dh and I love it), but I can sometimes marinate their chicken separately in something mild. I'm not doing any extra work, really, to make sure they can also eat. I think making this switch will have a positive impact on the kiddos' future eating habits. There's nothing like the example of a dad for young boys--even if it's with food. My plan is to slowly add things to my children's plates until theirs look more like mine. And the promise of a popsicle afterwards doesn't hurt either !!
