I use store brand lasagna noodles, just the regular boil kind but I don't boil...haven't for years and they always cook up just fine in my lasagna. I put some sauce on the bottom of the pan (thin layer), noodles, sauce, cottage cheese (my family prefers this to ricotta), mozz. cheese and repeat layers + parm. on top.

I do something similar with the ziti noodles. It was a recipe I saw in a Ragu flyer one time. I don't like ragu, but any pasta sauce works fine. You just mix 1 jar of sauce, about 1 1/2 cups water ( I just eyeball it anymore), then 1 container ricotta, and about 1 cup shredded mozzarella cheese ( the original recipe used parm. cheese too but I don't like it ), and half a box of ziti noodles (or penne, or any tube like pasta like that). Mix it all together really well, put in a throw-away pan, cover tightly, bake for like an hour, and then uncover, more mozz. on top & back in oven to melt it. When I have the time or inclination, I jazz it up with different seasonings, or saute up some onion/garlic to toss in. It is so easy. I didn't think it was going to work the first time I did it. But it did.

Oh My Gosh Macbeth!!! When I first read 'hermit crabs' I thought "do people really eat them????" I can just hear me now "Kids, dinner's on the table, tonight, we'll be having Bones (our beloved hermit) and his family"!!!

Taco night, every Thursday!
My oldest daughter makes the masa, presses the tortillas, and cooks them. Oldest son cooks the burger, next child shreds the cheese and shreds the lettuce. Next child chops tomatoes, little guys set the table and turn on the Mexican restuarant music. This meal pleases everyone at least once a week, especially me, I only coordinate it.
The only other thing that pleases all is sausage pie and fruit.

Nina,
I make a pizza pie...
I buy the pie crust from the store...
brown beef, ground turkey or chicken - whatever your preference and cook with onion, pepper, garlic, frozen spinach...
drain...
line pie pan...bake bottom crust for 5 min (poke tiny holes)
when this comes out of the oven, add meat, ricotta cheese, pasta sauce...
cover with crust
bake till brown
serve with salad...
YUM and gone!

I found this recipe in my favorite source for breakfast ideas, a B&B cookbook.
Sausage Pie
2 rolls of sausage-cooked
12 eggs-scrambled
3 cups cheese
2 pkg of crescent rolls
Line bottom of a 13x9 dish with one package of rolls, fill with cooked sausage, scrambled eggs and cheese. Top with second package of rolls. Bake for 25-30 minutes at 350.
I serve with a fruit salad. My children like taco sauce on it!
I'll leave it in the oven on warm while we're at Mass, it's a nice brunch to come home too.

oh wow. I sit back and contemplate my house of skinny piggies. Leftovers? Is it possible to have leftovers? I can't seem to ever make enough for leftovers! The only indicator of a less than liked meal is if there is anything left over.
I would give much to have a second oven and 2 more crock pots for this reason. I have seen one skawny little runt of a boy put away an entire large deep dish pizza all by himself and then say "that's it?" I sincerely hope they work in foods of some sort when they are teens because otherwise I may never get to leave the itchen for constantly making food.
We like chef salad buffet style because we can make it all ahead, it doesn't heat up the house, and we can graze on it through out the day for a relaxing Sunday. Dark greens, tomato, olives, cucumber, onion, shredded cheese, diced meat (leftover is actually the best kind), boiled chopped eggs, and dinner rolls.

Frozen dinners.
Frozen pizzas.
Mac and cheese is probably at the top of the list along with bowls of vienna sausage and grilled cheese sandwiches. They children often cut up vienna sausages into their mac and cheese.
Another quicky is what we had last night...frozen pancakes with fresh eggs.
One that we all love and is super quick and easy is the CasserOLE': dump a can of tamales into a casserole dish, top it with a can of chili and layer grated cheese on top. Bake in oven at 350 for 30 minutes. (perfect dish for taking to pot-luck dinners and covered-dish meals)
