Oh, Dearest Mother, Sweetest Virgin of Altagracia, our Patroness. You are our Advocate and to you we recommend our needs. You are our Teacher and like disciples we come to learn from the example of your holy life. You are our Mother, and like children, we come to offer you all of the love of our hearts. Receive, dearest Mother, our offerings and listen attentively to our supplications. Amen.

Hi Karen,
Sorry it took me so long to reply
the breakfast menus are there under the what's for dinner (which are under what's for lunch). Just scroll down a bit more and keep looking left, and it says:

Plan a healthy breakfast for tomorrow
Baked Oatmeal
Dutch Puff
How to Make Oatmeal
Coffee Cake
Smoothies
Granola
Baked French Toast

Hope this helps,
Alison

Today I am making a niner (how do you say nine batches?) of bananna / oatmeal muffins to freeze for the next week or so. I love when I can bake all day and set aside some good meals for those busy days.

Maddie

Could you share this receipe please? Although banannas are gold here at present after Cyclone Larry, $12/kg the other day

Yikes! (I guess, not sure what the conversion would be)They're 4 pounds for a dollar here. I'll send some right over.

Banana Oatmeal Muffins

Bowl 1
1 c flour
1 1/4 c oatmeal
3 tsp baking powder
1/2 tsp salt
1/4 tsp cinnamon

Bowl 2
1/3 c oil
1/2 c sugar
1/2 c br. sugar
2 eggs
2 mashed bananas

Add mixture #2 to mixture #1. Mix until ingredients are moist. Do not over mix. (Can add 1 c blueberries if you like)
Bake 400 for 20 minutes

I have several B&B cookbooks with the greatest muffin recipes! We have made pumpkin, peach, gingerbread, and mandarin orange muffins recently, yum.

Maddie! I'm going to print that out! What a delicious sounding recipe. My family (DH especially!) loves muffins! If you feel so inclined, would you share some of the others or maybe the names of the B&B cookbooks you got them from??? Thanks!

Be glad to!

Pumpkin Bread / Muffins
3 1/2 c flour
2 tsp baking powder
1 1/2 tsp salt
2 tsp cinnamon
3 c sugar (a lot, I know)
1 tsp nutmeg
1 c oil
4 eggs
2/3 c water
2 c pumpkin
Sift dry ingedients together. Mix pumpkin, water, oil, and eggs together. Pour into dry mixture and mix well. Pour into well greased loaf pans. Bake 350 for 1 hour 15 minutes.
Muffins in greased pans or paper cups-bake about 25 minutes or until springy. (it may have been 35, can't remember-just watch them )

Mandarin Muffins
1 - 11 oz can Mandarin orange segments
1 - tbls orange extract
2 c flour
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 c br. sugar (packed)
1/4 c sugar
1 egg - well- beaten
1 8 oz carton sour cream
1/2 c shortening
Drain orange segments, reserving liquid. Cut segments in half and place in measuring cup, add orange extract and reserved liquid to make 1 cup. Set aside.
Combine flour, baking powder, soda, salt, and sugars in bowl. In seperate bowl, combine egg, sour cream, orange mixture, melted shortening. Make well in the center of dry ingredients. Add orange (wet) mixture. Stir until moistened. Spoon into greased or lined muffin pans 2/3 full. 400 for 20-25 minutes.

Gingerbread Muffins
1 c shortening
1 c sugar
1 c molassas
4 eggs
2 tsp baking soda
1 c buttermilk (I use regular milk)
4 c flour
2 tsp ginger
1/2 tsp cinnamon
1/2 tsp cloves
Cream shortening and sugar until light and fluffy. Stir in molassas; then add eggs one at a time beating well after each.
Dissolve soda in a cup with buttermilk. In seperate bowl combine flour with spices and add to creamed mixture alternately with buttermilk. Fill muffin cups 2/3 full. 350 for 15 minutes.(Batter may be stored for several weeks in fridge~add 5 minutes baking time if mixture is chilled.
Make sure it's only 2/3 full, tops burn easily.

I'll have to look for my peach muffin recipe, we used it so often the page fell out. Hope you enjoy them.
