O.K.--a few questions on the rice pudding recipe (Rebecca's):
Can I substitute anything for the milk? How do you use raw rice instead of cooked--just pour it in and cook longer? will this make it more dry? I am notortious for overbaking. I think this is why my rice pudding turns out dry. If I could use dairy I'd use canned milk--is there another liquid that will make it that rich? Thanks!

I do, at least a couple of times a week.

Does anyobdoy know if there is any such thing as whole grain arborio rice? So I could make whole grain risotto....

This is what I use. Although not arborio per se, it's the same creamy texture to use in risotto.

Yes! Yes! Yes!
My dh's dad came from the Phillipines, so in our family, a rice cooker is the #1 used appliance! Well, OK, #2, coffee maker is #1.
We use it constantly, make rice, and put patis on it. Don't smell it, just use a couple of drops for seasoning.
You can steam veggies in a rice cooker too, though I haven't tried it yet, but I want to!

I have used rice milk in the past when making it for my oldest who used to have a dairy allergy. I also have a vegan rice pudding recipe that is yummy as well if anyone wants it.
