This dip is SO GOOD. My friends who are gluten free can eat it too!!

Mexican Spinach Dip

8 oz. cream cheese, softened
10 oz. frozen chopped spinach, thawed and strained
12-16 oz. salsa (I use Sam's Club salsa.)
2 cups shredded jack/colby cheese
small can chopped black olives

Mix all together. Baked at 350 for about 30 minutes. Serve with tortilla chips.

This is one of those recipes that I have to lick the bowl after I make it - even before it's baked!!

Another easy recipe we've used for cheese balls is to just mix softened cream cheese with grated chedder (or other cheese you prefer), mix in whatever seasoning go well with that cheese (chili w/ chedder, dill w/ jack, and so on), then form into a ball and roll in chopped nuts. I don't have proportions, we've just kind of guessed at it!

Another item on my list for this Christmas season is tiny meatballs, served on toothpicks with a spicy tomato sauce for dipping.

I don't know where the recipe is anymore, but there is another very good appetizer called sausage balls, that I think is basically ground sausage mixed with biscuit dough, shaped into walnut sized balls, and baked.

Great ideas on this thread! I think I will have to print it out and use some of these over the Twelve Days of Christmas.
