OK, I thought I was going to have a great chicken suggestion here. We are studying India and decided to attempt some native cuisine, namely a "spicy chicken" recipe we found.
Well, it is not going over well. I just called dh to let him know that the chicken we were going to have is not palatable to anyone. The smell is... awful.
Does anyone cook Indian-type cuisine? I don't know what I may have done wrong.
Basically, it was chicken breasts mixed with the following spices: allspice, cayenne pepper, turmeric, ginger, salt, and one called Garam Masala (a combo of pepper, cinnamon, cloves, cardamom, cumin, and nutmeg.) After mixing these (and I used a good 2/3 less than what it called for of these spices,) add garlic and lime juice (these I doubled, because we like them.)
The finished product is very yellow (I don't know which spice made the chicken yellow.) I can't taste the cayenne at all. Even the clove is hard to distinguish.
I tried washing the chicken, and rubbing it, to no avail. Is it just our Westernized taste buds, or did I do something terribly wrong? If anyone knows, I would so appreciate the advice.
We read the Demi book about Mother Teresa, and the boys said, after tasting the chicken, "this is why 'The nuns of the Missionaries of Charity lived on a plain and simple diet of bulgur, rice, vegetables, wheat gruel, and vitamin pills.'"

I love Indian food, and I do cook it (when I have a stove), but my brothers will not eat it. One brother cannot go into an Indian home due to the smell of curry--it makes him ill. For more info on Garum, read Salt by Mark Kurlesky (sp?)...he goes on and on about the stuff! Anyway, Indian food is very unique, and the combination of spices is not appealing to everyone.
Yellow and red are common colors for Indian food--normal! Perhaps the cayenne you used is old? It can lose its flavor.
Lime juice can overdry meats like chicken, making them less tasty, and more dry. Still, garlic makes everything better .
Do you have Indian take-out near you? That might help you to determine if the food was "normal" tasting, or if there was some glitch in the recipe .

I tried Michelle W's recipe with the roasted red pepper/sour cream sauce last night and it was a big hit with everyone!!! That rarely happens around here so it is definitely a keeper!

I hesitated to post this because it's hardly gourmet, but it's been a family favorite for years. We call it sour-cream chicken. Very easy. You dip chicken breasts in sour cream (I've also used ranch dressing) and then coat them in finely crushed cheese crackers (we use Old Liberty which are basically organic Cheez-itz; Paremesan Garlic Cheez-itz are also delish ). Cook in a 9x13 (I spray it with Pam, but family tradition says melt a whole stick of butter in the dish first ). I toss in cut up yellow peppers and zucchini to roast around the breasts.

Chicken Quesadilla were a hit!
Cook the chicken breast first in lots of garlic and whatever else you have on hand. I had a dried New Mexico Chili pepper, a finely chopped carrot, half an onion, a little beef broth (leftover), salt, lots of garlic. When this was all done in a skillet. I removed them to a cutting board, chopped it fairly fine, heated butter in the same skillet and put down a ww flour tortilla with Jack cheese and the chicken. When brown I flipped them in half.
It was experimental, but it was a hit!

Since I have no stove and not much of a kitchen, I cheat , and add chicken cooked in olive oil and garlic to a box or two of Zatarain's Beans and Rice. When my kitchen is done, I'll be able to cook it properly. For now, I add fresh tomatoes and onion, peppers and hot sauce. Everyone eats it but Paul, who will eat plain chicken and some bread.

I love those Zatarains mixes. Our favorite is Dirty Rice--the kids LOVE the name.
I hadn't tried the black bean one, though. I'll give it a shot!
