I use coconut oil or leftover bacon grease. Sometimes I add some onion, but usually they are good on their own with a generous sprinkling of salt and some pepper.

Sometimes I also grate them to make more of a hashbrown instead of something more like home fries.

A little garlic powder on fried potatoes is really good without making them "fancy" too. Use a bit lower heat and let them get good and brown before you turn them rather than stirring them around like scrambled eggs. And if you use cast iron.. let the pan and oil (whatever type) get good and hot before you add the potatoes.

Absolutely . Dh makes potatoes so rarely, he always forgets this, stirs a lot, and we get soggy potatoes Hot pan, no crowding, and moving as little as possible are keys to golden, crunchy potatoes.

And after reading and posting on this thread... I had to go and make fried potatoes.. because as luck would have it.. I had 2 small leftover baked potatoes in the fridge
