Oh, Dearest Mother, Sweetest Virgin of Altagracia, our Patroness. You are our Advocate and to you we recommend our needs. You are our Teacher and like disciples we come to learn from the example of your holy life. You are our Mother, and like children, we come to offer you all of the love of our hearts. Receive, dearest Mother, our offerings and listen attentively to our supplications. Amen.

Major news media is saying "Assisi" but I haven't seen a Catholic source saying one way or the other.

I think it is likely because the major news media didn't know there was an Xavier since he doesn't come in garden statues

It is also entirely possible he chose it due to his devotion to both those men, especially since both seem fitting to his personal charism.

We're having a late dinner. Had lunch at 3:30 because we were glued to EWTN!!!

gluten-free in honor of Pope Francis!!! Habemus Papam!! :)

argentinian "fried rice", roasted shrimp with chimichurri sauce, some malbec, and some dulce de batata con chocolate.

I can't wait for the interview so he can confirm the source of "Francis". Was just listening to Fr. Mitch Pacwa on EWTN on the way home, and he said maybe both.

I was going to go with empanadas (take some pie crust if you don't want to make your own) saute garlic onion, tomatoes, peppers in olive oil, and your choice of meat or seafood (shrimp or tuna can go here) + veggies if you like, like chopped potatoes or peas.... cut pie crust into circles, stuff, crimp, bake or fry.

but i couldn't because this Lent was my recommitment to a gluten-free wheat-free lifestyle, for the sake of my hubby and eldest daughter. :)

Well I'm making enchiladas (done very soon) tonight and using Melinda's "pope pie" idea.

And I'll look at doing something else like empanadas or whatever for the 19th.

I know it's Lent and we probably shouldn't enjoy treats, but we don't get a new pope everyday, do we? So we had "key lime pie" ice cream. I went to the Vatican website and printed out the Holy See logo, which now also has these words on it:

HABEMUS PAPAM

FRANCISCUM

I reduced the printout, made several copies, then attached it to skewers, which I stuck in the ice cream.   Then, for fun, the kids had to guess why we were having key lime ice cream. They made the connection relatively quickly, when they recognized "Peter's keys" in the logo.

Have another fun meal planned for either tomorrow or Sunday. I'll try to post about it later!

In light of the recent frenzy of science experiments at my house, we are just delighted that our new Pope is a chemist .

BTW- dry ice costs about $1 per pound at the grocery store. Dry ice+gloves+safety glasses= hours of entertainment

Just saw an interview with Cardinal Dolan that he immediately told the cardinals that he chose Francis for St. Francis of Assisi.

he also said Pope Francis rode the bus home with the cardinals last night!

Lindsay, are you talking about Pao de Queijo?

If you are, and if anyone's interested, here's how we made Pao de Queijo when we did our Brazilian exploration a few years ago.

Brazilian Cuisine: Pao de Queijo

it is very yummy bread, except it has dairy and eggs, so i still couldn't use it.
