Cream cheese - YUM! I love all the ideas above. I also mix it into mashed potatoes and any cream soup I make.

Yes, you can freeze cream cheese but not if you want it to be creamy. It's good for cooked foods though.
I freeze half-packages for "Better-than-boxed macaroni & cheese". It's from Mary Ostyn's book Family Feasts for $75 a Week The recipe may also be on her blog, owlhaven.net. I just made this yesterday. It is yummy and creamy.

Around here:
freeze it if needed (comes out crumbly which is fine for many things)
mix with scrambled eggs
layered onto sandwiches of almost ALL kinds!
cream cheese frosting (equal parts cream cheese and powdered sugar, with a tsp of vanilla or almond extract - makes a just barely sweet frosting; up the sugar to taste) --- use like regular frosting or spread onto graham crackers for a treat

Did this tonight- sprinkled shredded cheddar cheese on top and cut up a fresh pineapple as a side. Called it dinner- no complaints!

Oh yes, cream cheese frosting - always delish and so many ways to make it (maple, cinnamon, raspberry, pumpkin) and can go on so many different treats.
