Oh...I can't wait to read all of this! Replying to just the OP right now:
Diana, our family has turned this whole lemon situation into lemonade! (Hope you like the food metaphor  ) We entertain at our home with big ole parties of comfort food - good old-school feel good chow. We also let people know to bring whatever they like to make their time happy here (and we mean it!!!) - dietary needs, little kid picky needs, personal favorites to fit the occasion, etc. That's it!
Now we are like the fun, foodie, party place to be! I think people love coming here because THEY ARE HUNGRY! I give them some corned beef, potatoes, hot dogs, pasta, baked beans, meatballs, chili, cookies, ice cream, beer, lemonade, you get the picture  , and they eat & eat & drink & drink.
One of my dd's college friends, recently turned vegan and looking for meaning in life, came to our St. Patty's party and had a blast! Now we're good friends and she thinks we're the coolest Catholics she knows  .
While I love food (and I do!) and I love cooking for others (and I do!!) I most love God & His Church. Keeps it all rightly ordered  .

Oh, I love this thread!
I just wanted to jump in really quickly to share. My MIL always tries hard to cook healthy homemade meals for her family. She always does her best to accommodate all the various food preferences of her children and grandchildren, and does this far more cheerfully than I would, as there are no real allergies to speak of. Whenever she is reprimanded about her choice of ingredients or given a lecture about the dangers of this or that food group, she responds,"I do my best to make healthy food. Then before I eat, I always ask God to bless our food, and trust that He'll take care of the rest"
