Here's my favorite site for oatmeal. Today we'll top with an apricot plum sauce (fruit I had in the freezer that I placed in a slow cooker with lemon, honey, cinnamon) + buttermilk syrup and chopped almonds. Both toppings last for a long time refrigerated.

Oh, wonderful!! I was just wondering about some new ways to dress up oatmeal. We eat tons of it during the winter! Highly requested almost every morning!

Speaking of oatmeal....baked seems to be the way to go here. I use this recipe as a base, then whatever frozen fruit I have on hand is what goes in! Baked Oatmeal

Jenn, Aiden and Ian just made and inhaled this! Thanks so much. I like that this recipe keeps the integrity of the oats (so does the stove top method I shared). And...you betcha...we used *frozen banana* (in place of fresh) + frozen berries (from Costco.)
Have you made this the night before then baked it in the morning?

Angie, I have never let it soak overnight. I prepare and bake the night before, then serve it either cold or heated up the next day. Most of us like it cold with maple syrup.

Another breakfast food idea, microwave eggs n muffin. 12yo ds loves making these. While Canadian bacon is too expensive for every day, he sprinkles Costco crumbled bacon or we make our own breakfast sausage crumbles that we keep in the freezer. We also keep muffins and sandwich thins in the freezer.
Speaking of those sandwich thins, they are totally worth the expense because they are very versatile. We use them for chicken patties, burgers, salmon patties, everything round . Personally, I prefer the "less bread" ratio to regular buns (which also don't freeze as well and take up too much space!)

Great thread!!
I am looking for ways to cut back the food budget. We have some big bills coming up in April, so I need to find some extra money in the next 8 weeks :) I should really be more frugal with the groceries all the time.
I do hear you on the not grabbing lunches and snacks. I tend to plan supper and breakfast, and forget everything in the middle.
I have started having dd12 as part of her school home ec program, doing baking during the week. Yesterday was apple sauce muffins, with pureed squash. Today is chocolate chip cookies with chickpeas blended and added in..lol. This is a favorite. A little higher protein for more staying power.
An idea for menu planning.
Chose your recipes for the week, I retype mine to print. I put them in a duotang. From the chosen recipes, I write each and every ingredient down. To make a thorough shopping list. Now, From there I go through the cabinets, freezer and fridge, and cross out what we already have.
I am still working on this part, but every week, some one else, other than mom makes dinner on a few days. We are working on that. There is no reason the 3 oldest can't do a night.
Yesterday dd12 made supper. She started at noon, as we had art classes all afternoon. She browned the beef, added the sauce ingredients and put it in the fridge. She reheated it when we came home, turned on the oven made a 2nd sauce, made pasta, assembled it, baked it, then made a caesar salad. We do need to work on tidying as we go. But still, it helps me out too. Dh was surprised to learn it wasn't my cooking :) Impressed immensely that it was dd12.

my current favorites:
edamame, steamed or boiled, tossed with orange juice, soy sauce, sesame oil and hot pepper
warm lentil salad, with some cornichons or gherkins and thin slices of salami
what my kids call "liquid banana bread" -- banana + almond butter + cinnamon + soy or whey protein powder + handful of spinach + ice + water -- blend until smooth
avocado omelet -- just what it says
celery, walnut and parmesan salad tossed with lemon juice and olive oil
fennel and asian pear salad

stuffed baked potatoes
while they take an hour to cook in the oven.. there's very little prep.. you can also cook in the crockpot or microwave for different cook times..
But you can use up leftovers with the potatoes so easily.. meats with gravies, chili, just chopped up meat, leftover taco meat, steamed veggies. etc.

Angie. Making a gallon is just like making a quart, you just use more milk and yogurt. I am sure you have a great recipe but just in case here is my one- heat milk to near boiling (lots of little bubbles on side), let it cool till you can put some on your wrist, pour it into something glass (I use a gallon jar or a few one litre ones), stir in a cup of old yogurt, and wrap in blankets and don't let it get bumped for 6 hours or more! Have fun! I am glad you mentioned it- I am going to make some tomorrow!

Thanks, Angie, there are a lot of ideas here!! I just made a big bag of cranberry beans. They were grown locally just 20 mins up the street! I made soup with about half of them, and put the rest in the freezer to have as some kind of taco filling later this week. (The one who does not tolerate beans is away to college, so we can do a bit more)
Wow...those are cheap! My kids have varied success with beans, with their peanut allergies legumes can be a bit tricky. Some can do black beans, the cranberry beans, but a few struggle with lentils and red beans for chili, and one can’t do black beans. Weird.
I always have bristled at Dave Ramsey’s “Beans and Rice, Rice and Beans” because not all of mine do ok with beans. Try to eat cheap with food allergies, Mr Ramsey!!
