Yum and no, I haven't used it. But this does remind me of clarified butter which is also something I haven't splurged for...yet .

Thanks for the oil tip. I've had mixed results with dipping oil...one I paid a lot for and hated it, ended up cooking with it...another I loved but threw away the bottle and can't remember it . I LOVE pouring it on a plate with course salt and a splash of balsamic vinegar. Oooooooooo...add fresh mozzerella, tomato, and basil...

you ladies are in the middle of summer, We are in the middle of winter, in Australia, so our all time favourite healthy meals at this time of the year are slow cooked meals, means I can prepare a meal before I get too tired, and
salmon mornay with veges- friday special after a long week and a long friday, everyone helps me do this one.
one fabourite is boiled potoatoes- that have been alightly flattened and placed on a tray with salt pepper and crisped and browned. then placed in a bowl with cheese and parsley on top. yummy.

I was inspired today by these baked eggs. I worked with what I had on hand. I tucked a half of a sandwich thin in an ungreased muffin tin (will spray next time), added a butter/canola spread to bread, dropped in egg, and a touch of more spread on top. Baked for ~15 minutes.

On the stovetop I made a wilted spinach salad (sauteed fresh spinach, olive oil, cherry tomatoes, olives, etc.) and fried some turkey bacon.

Served with watermelon. YUM!

I split a giant can of chopped clams and used half to make a white clam sauce (served over pasta) and put the other half into a slow cooker with chopped tomato, parsley, onion, potato, carrot, and seasoning to make a simple Manhattan clam chowder.

We're making a lot of cold bean salads as well.

I hope to remember to put whole grains into my Vitamix tomorrow night to make whole grain pancakes on Wednesday morning.

Our season won't change here soon but I am eager to hear what others eat that fit the healthy, delicious, appealing criteria come cooler weather.

lately i've been buying the flat bread from Sams and spreading Laughing Cow cheese on one with sliced English Cucumbers with salt and pepper. very fresh tasting.
