Oh, Dearest Mother, Sweetest Virgin of Altagracia, our Patroness. You are our Advocate and to you we recommend our needs. You are our Teacher and like disciples we come to learn from the example of your holy life. You are our Mother, and like children, we come to offer you all of the love of our hearts. Receive, dearest Mother, our offerings and listen attentively to our supplications. Amen.

That's me! Oh, and strawberries. I LOVE chocolate covered strawberries and I'm well on the way to teaching my girls to love it as well although they usually just use their fingers to scoop up the chocolate.

I had chocolate covered raspberries once many years ago that I *still* crave. They were so delicate and lovely and I paid WAY to much for them - totally worth it!

A grandma I knew in Elko NV ages ago used to make chocolate covered canned pineapple ring - sounds weird but they were juicey and awesome.

I've been on a Nutella on whole grain saltine roll. My 10yo is my partner in crime .

Hmmmmmmmmm...right now, since I could use some protein with my chocolate, I'd go for covered cashews - and lots of em!    (don't mention this to my 4Real exercise buddies )

Love,

I"m pretty sure that his holiday is transferred to today for those of us observing Ember Days.

And I was going to say that I wasn't into chocolate covered stuff until I read through the thread. Hmm . . truffles (chocolate covered chocolate), espresso beans (sort of--those always are in dh's stocking), almonds, ginger, toffee--probably my favorite. And mint! I'm trying to make my own peppermint patties for Christmas this year.

How could I forget? Mint and chocolate is one of the very, very best combinations.

Well, you gals sure have inspired some fun recipe searching. I haven't made these, but don't they look lovely? If not for Christmas, maybe St. Valentine's Day!

Okay, this is scary.

I woke up this morning and the first two words in my thoughts were (sorry, Lord) -- PEPPERMINT PATTIES!!

I don't know why, I've never made them, and never even thought of making them.

And then I come here and find your posts!

It's a sign that you need to make peppermint patties for all us peppermint patties lovers and send them to us for Christmas . I've seen them made with potato - huh? Devin makes a mint patty with cream cheese, but we haven't covered them with chocolate...yet .

Love,

Big disclaimer: I haven't tried this recipe yet. I got it from a friend.

Peppermint Patties (Weston Price-approved)

3 c. shredded, unsweetened coconut
1/3 c. real maple syrup or honey
1/2t. mint extract or 3 drops peppermint essential oil

Blend coconut in a blender to a butter-like consistency. Use a wooden spoon to keep it moving and don't overblend until the oil separates out.

Add sweetener and oil and mix well. Shape into patties and freeze.

Once frozen dip in dark, melted chocolate.

My friend claims you need a Vitamix to do the coconut. I have a pretty good regular blender so I'm going to give it a try in batches.

oh... if you make a white chocolate fudge..any flavoring.. it's nice with lemon or orange flavoring or with chopped pecans stirred in.. then cut the fudge into pieces and drizzle with semi-sweet chocolate
