This will be our second year for buying a kit. I was thrilled to find some that had icing that didn't have egg ingredients. Ds1 can't do eggs, wheat, and milk. We decorate it, and he can lick the icing and eat the candy.

But my hubby likes to eat the gingerbread.

We don't do gingerbread houses ... occasionally we will do a graham cracker attached to a milk carton OR a store-bought, premade pieces house ... but I just can never get the gingerbread right and it ends up such a mess ...

it's just not a good idea for us

I never tried to make a gingerbread house untill I came across a recipe that doesn't require refrigeration . You can work it right out of the pot . I always hated trying to keep the dough cool enough to work with .

I think that any recipe can be converted to work this way. And it makes a fun science lesson .

Put 1/2c butter, 1 1/2c molasses, 2/3c apple juice, 1c brown sugar in a good sized pot (I use a spaghetti pot)on the stove and heat on medium/low heat to melt the butter and sugar, stirring frequently.

In a seperate bowl I combine the 6c flour, 2t salt and spices (1t each cinn., cloves, ginger, and allspice).

When the butter is melted, I take the pot off of the stove and add the leavening (2t baking soda)to the molasses/butter mixture and stir it in good. the acids in the apple juice and molasses cause the baking soda to bubble up like a volcano (hence the spaghetti pot ). Once the soda is mixed in, I add the dry ingredients into the pot to make a stiff dough (use a little more flour if needed). I can work with this dough right away and it is super easy to shape and bake. I bake mine at 350 for 8 min. or so depending on thickness.

At 1/4-1/2 inch thick, it makes great mini gingerbread houses. I make all of my kids one each to assemble and decorate, and, yes, they do end up eating them as well. I at least make them wait a couple of days .

Tx Trish, do you want a 'no refrigeration required' Lemon Sugar Cookie recipe? I always get compliments on these, but I usually make them for Easter. They would be great for Christmas though.
