cowboy stew . basically beef stew with biscuits on top . you can make it with hamburger too but I don't like hamburger stew .

Yum! Roxie, do you make your own biscuits? Does anyone have a recommendation for store-bought biscuit dough that is wholesome?
We had our first official Skllet Night last night and it was a hit. I mixed together some onions, green peppers, broth, ground turkey, Italian seasoning, and gnocchis. We had leftover squash and tomato that I wanted to add but served as a side at the request of some of my eaters. We topped it with grated romano cheese. The meal was hot, fast and healthy and the clean up was easy .
I told my children that the 4Real ladies had us lined with with skillet meals for many Thursdays to come . Thanks!...and keep 'em coming.

Mine is Mac and 'Mato
Cut up some bacon and brown with onion and garlic. Add 2 cups macaroni and most of a bottle of spicy V-8. Let the pasta soak up the juice and add more if needed. Put hot pepper sauce on at the table if you like spicier.

I have a recipe that is made constantly for my littles with dairy allergies, that is hearty and good!!
"Sausage and Rice"
Brown 2 pounds of italian sausage, ( I usually get Bob Evans), add 1 14 ounce can of diced tomatoes.....three cans of water...1 cup of rice....let the rice simmer in the skillet with the sausage and tomatoes, and after 15-20 mins, stir in corn. ( I always use Costo's frozen corn, it is the best!) Let the corn cook for a few-- Waa-laa...sausage and rice.
Now.....for more veggie power--the original recipe called for using green beans in place of the corn, and also you can add leftover chicken for quite the protein punch. No seasoning really needed, the sausage does the talking.

That's a large bottle of V-8 and the mac is uncooked until it cooks in the juice. Let me know how they like it. Thanks!

Ok, should have mentioned the title-
cook's illustrated- the best skillet recipes
not just a cookbook- they explain how they found the perfect recipe in their test kitchens and explain step by step what did and didn't work! I love their chili mac recipe!

I make a skillet potato meal... sausage, potatoes, onions, peppers if you like, fried in a pan, topped with cheese at the end. Kind of sort of like hash browns, I guess, except I use regular potatoes and cut them in rounds. Yukon Gold are my favorite.
Oh, also ratatouille, if you have leftover rice (although we really like it on eggs, too), and we also like it with hamburger added... and I also modify Hoppin' John to be a skillet meal with the addition of veggies (like peppers and tomatoes) and ham or bacon.
