Oh, Dearest Mother, Sweetest Virgin of Altagracia, our Patroness. You are our Advocate and to you we recommend our needs. You are our Teacher and like disciples we come to learn from the example of your holy life. You are our Mother, and like children, we come to offer you all of the love of our hearts. Receive, dearest Mother, our offerings and listen attentively to our supplications. Amen.

That is very interesting about freezing the eggs. I never would have guessed!

I use a muffin/cupcake pan to freeze eggs (scrambled or not) crack eggs into the tin - once frozen I put all of them into a large ziplock freezer bag.   Then I can just pull out the number of eggs I need for a recipe.

This is basically how I have been doing it, too. Quick and easy. I have been using the smallest GladWare mini-round containers (1/2 cup size), because they're easy to pop the frozen eggs out of. I was planning on using the eggs for recipes, but appreciate the eggsperiment link so I know they'll fry up if we need them!

(I love lemon curd...another great idea - thanks, Lindsay!)
