Swedish Gingersnaps

The Swedish name for these cookies, Pepparkakor, is a reminder of the fact that in medieval times ginger and pepper were always used together, and their names became interchangeable. That is why so many ginger-flavored cookies and cakes are called "peppery" in flavor.

3/4 c. unsalted butter
1c. firmly packed light brown sugar
2 1/2 TBLS. golden molasses (I used regular)
3TBLS. boiling water
Grated rind of 1/2 lemon
2 3/4 c. sifted flour
1tsp. baking soda
2 tsp. cinnamon
1 tsp. powdered cloves
1 tsp. powdered cardamom
1 1/2 tsp. ginger

(I'm leaving out the recipe for decorative icing since I rolled mine in balls and flattened them).

Cream butter with sugar until light and fluffy. Mix molasses with water and add to butter mixture along with lemon rind. Sift flour with baking soda and spices. Add 2 1/2 cups to batter and stir thoroughly. Add remaining flour if necessry to give a dough smooth enough to roll out but one that is still soft and pliable. Knead dough briefly until smooth on a lightly floured board. Wrap in waxed paper and chill for 1 hour. Roll out to paper thinness on lightly floured board. Cut into figures of boys and girls, hearts, stars, circles, etc. with cookie cutters. Arrange on a lightly buttered cookie sheet and bake in preheated oven at 350 deg. for about 10 min. Cool and decorate. Makes about 5 doz. 2 1/2 in. cookies.

I rolled mine in balls, rolled them in red and green sugar and flattened them. They're crisp yet chewy but not hard to bite.

Anyone still baking Christmas cookies? We'll be baking cut-out sugar cookies soon for decorating on Epiphany. We'll probably bake something for snacking with the neighbors on the feast of the Mother of God.

This Gingerbread Lantern we made for Christmas last year would be a great St. Valentine's day project if you substitute heart cut-outs on the sides!

Come to think of it, the Gingerbread Lantern would be a fantastic Epiphany decoration with the stars on it too!
