What I am posting here is my modified version of the chili...the original recipe I got here: http://www.recipezaar.com/Delicious-Lentil-Chili-24895...

Here's what I did:

1 lb or dry red lentils
4 cups of boxed organic red pepper soup (you get it at Trader Joe's or Costco)
1 cup H2O
1 16 ounce can of refried black beans with jalapeno (another TJoe's purchase)
chili powder to taste
cumin to taste
oregano to taste
1 onion, sliced
2 stalks celery, sliced
3/4 cup cold water...

It was the most delicious chili that I have made!

Mary G's Salmon Burgers were absolutely delicious!! And that's saying alot because I am not overly fond of canned salmon. Everybody loved them even the little guy and the buns were nice and fluffy too. Thanks for posting that link Mary. My 6 year old asked when I was making them again.

All these recipes sound wonderful - I have such a hard time because my family is not very adventuresome with meatless dishes. And I'm so tired of the same old stuff.

We had a Lemon Lentil Soup, Papa Murphy's cheesy bread, & salad tonight.

We had salmon, sweet potatoes, broccoli for lunch yesterday.

For supper we had veggie quesadillas. Yummy!

This was a huge hit! With everyone!! It says it's for FOUR servings, but it fed 2 adults and 4 kids, and we had several pieces left over. AND, I had leftover spinach mix for use later.

And, we had this for Sunday brunch, but would make a good Fri night meal:   Bloody Mary Breakfast Bake.... a good variation of the bread-egg-cheese casseroles. Salsa on top!!!
