Breakfast was Oven Bake Apple pancakes
Lunch was Italian Grilled Cheese sandwiches
Dinner- beef fajitas, corn and chips.

This is a 3 out of 3 recipe! Meaning all three kids shout with glee when I tell them the menu. I usually aim for 2 out of 3.
I want to make chicken like Fuzzy and LisaD, those sound yummy!

This cracks me up - we have a lot of "fractional" meals here too. I love when they like the same things. What I really dislike is when I think I have a 4 out of 4 meal - one of them decides he/she doesn't care for that meal anymore.
We're having chicken dijon (Mary G.'s son's favorite meal at our house ), buttered/herbed noodles, & broccoli.

Boring here. We had tomato soup and bread or grilled cheese. We're all sick. It seemed a waste of perfectly good food to make anything else that I wouldn't be able to taste.

LOL Lisa! For all you ladies who know me and my love of kitchen items, I will bake my chicken in my stoneware!
When I make this chicken, it is a 2 out of 2 with my kids. I KNOW they will eat it. And, if there are leftovers, it is a GREAT sandwich the next day. Lots of mayo, warm meat, drizzled with some of the gravy.....

We wound up having kielbasa, orzo pasta and green beans. Nutritious and reasonably popular. Very quick (good; got home from dance lessons at 8:00).

Nacho with this sauce to which I add a can of well drained Rotel diced tomato and green chili. We'll add whatever other toppings we have...green onion, black olive, chicken, black bean. This is a 5-6 meal here...now if we can just get JP on board .

The key to tasty lentil stew is leftover chicken drippings from a roasted chicken and broth boiled from the same chicken carcass. Otherwise it's pretty boring and plain. And, I add lots of ham when I have it. Or a ham bone/shank/hock, etc.
2 tablespoons olive oil
1 cup chopped onion
3 garlic cloves, minced
4-5 cups chicken broth
1 cup dried lentils
1/2 cup chopped carrot
2 bay leaves
3 cups spinach
1 and 1/2 cups peeled and cubed baking potato
1 can (14.5 ounces) diced tomatoes, drained
1 teaspoon dried basil
1 teaspoon dried sage
1/2 teaspoon dried thyme
1/2 teaspoon black pepper
3 tablespoons fresh chopped parsley (optional)
Heat oil in a large pot over medium heat. Add onion and garlic; sauté 5 minutes, or until onions turn translucent. Add basil, sage, thyme, and pepper. Add broth, lentils, carrots, and bay leaves; bring to a boil. Partially cover, reduce heat, simmer for 20 minutes. Add spinach
and potato (and ham, if you like); bring to a boil. Reduce heat; simmer for 15 minutes, or until potato is tender. Stir in tomato, simmer 10 minutes. Discard bay leaves.
