I make tomato soup with canned tomato sauce, seasoned with salt (if needed) a bit of pepper (white pepper if I have it), parsley and granulated onion.. then just add milk to the individual bowl to cool it down a bit.

I don't have enough leftovers for a leftover night.. except beans and we had those last night so the rest will go in the freezer for a few days.. for some bean meals next week.
something easy would be good.. maybe tacos.. maybe stuffed baked potatoes.

Pepperoni Spaghetti for dinner with a salad and bread.
For lunch we had the leftover steak from a few days ago sliced thin as steak sandwiches.

Michaela...can I come to your house? That sounds SOOOO good. I love German food. Do you have a recipe for schnitzel? Veal? Pork?
Speaking of pork, last night we had really yummy pork chops seasoned with lemon pepper and tarragon that I simmered in homemade cream of mushroom sauce. I served it over brown jasmine rice, with a spinach salad on the side. I only wish I had some leftovers!
However, tonight we are having the frozen pizzas. Way too many things on our plate to juggle today!
I hope you all enjoy your respective dinners...This is becoming my favorite post to read!

Last week MissyC dropped off two pary size Stouffers lasagnas to keep in the freezer. My poor Abby has been cooking like a madwoman this week - so she gets the night off tonight! We will be having lasagna and salad!
For breakfast, dh made waffles and sausage. For lunch two of my boys made migas, orange wedges, and tortilla chips.

It's looking like some kind of Mexican chicken casserole at my place...total scrounge dinner. Not exciting, but frugal!

Breakfast - homemade blender pancakes
Lunch - chaos because of all the doctors appts. I hope my mum who babysat does not think we are usually this chaotic. Bread, cheese, cookies, crackers, sweet potato chips in disorganized fashion with littles falling asleep in their chairs.
Dinner - crockpot chicken dinner that my sister sent me saying it is the yummiest:
3-4 lb broiler chicken
1 medium onion, thinly sliced
1 lemon thinly sliced
18 oz bottle barbeque sauce
¾ cup coca cola
Place chicken in slow cooker
Top with onion and lemon
Combine barbeque sauce and cola. Pour into slow cooker
Cover. Cook on low 8-10 hours or until chicken juices run clear
Cut into serving-sized pieces and serve with barbecue sauce.
I am serving with steamed vegetables and rice.

Okay, Marilyn, I am adding that to my slow cooker recipes! Sounds yummy.
I am enjoying these threads. It gives me great ideas. And it does not make me feel so rotten when I serve leftovers or casserole!

Fish tacos and cantaloupe
Usually Thurs is leftover night, but we seem to be running out of leftovers lately. Either I'm picking better meals, the kids are expanding their tastes, or people are growing and are willing to eat anything.

I made a similar recipe recently but it had plenty of dill. Very yummy! Bill loved it but did a double take when I told him about the cream cheese.

Breakfast was French Toast at Annie's request
(Come to think of it, breakfast is alway Annie's request...giving truth to the saying "The early bird catches the worm." )
Lunch was leftover spaghetti which Kayleigh cooked last night.
Supper is Pork Jambalaya
Dessert is an orange-lemon ice cream slush which Chelsea made. It was delicious!

We almost NEVER have leftovers - I have some children who can always eat more If I double up on meals I have to put the second meal away before we start. I try and have extras for my dh's lunches - but again I have to put this away before the meal!

Usually the leftovers are just enough for my dh and oldest son to take to work the next day. They are both big eaters.

Orange Blossom Slush
8 cups milk
3 cups sugar
1/2 cup honey
8 large oranges (she used clementines)
2 lemons
Heat the milk, sugar and honey to "almost" boiling. Pour into a baking dish. Set aside to cool.
When milk mixture is cool, put dish in freezer and freeze until slushy.*
While milk mixture is freezing, juice the oranges and lemons.
Pour milk mixture into a large bowl. Stir in the orange and lemon juices. Mix with mixer until slush is smooth and fluffy.
Return to freezer and freeze for 3 hours. (In the pantry Chelsea found a plastic pickle container that belonged to her grandma. She scooped the slush into it and it stores like a carton of ice cream. Perfect! )
Enjoy!
*(Watch what your child uses and where they set it in the freezer. Chelsea put the mixture in a cake pan and when I opened the door it was tilted on top of a frozen roast. Could have been very messy. )

I know. Guess that's why it tastes so good.
Had I known Chelsea was fixing it, I'd have had her use more honey and less sugar. Of course, with 7 people living here, it isn't like we get to eat large amounts of it.
