Oh, Dearest Mother, Sweetest Virgin of Altagracia, our Patroness. You are our Advocate and to you we recommend our needs. You are our Teacher and like disciples we come to learn from the example of your holy life. You are our Mother, and like children, we come to offer you all of the love of our hearts. Receive, dearest Mother, our offerings and listen attentively to our supplications. Amen.

Hmmm... I wish we were going out for Chinese New Year! But.... we're not.

We're having honey mustard chicken, brown rice, and... peas?

But since the Chinese love brownies, I think I'll make some of those for dessert... with whipped cream, of course.

This sounds super yummy, Lisa!!! Could you tell me how you make your baked sweet potato fries?

Um...sure. Got a pencil? Now do exactly as I tell you...

Rip open the bag of Trader Joe's Sweet Potato Frites, put them on a cookie sheet, and bake at 425 degrees for 18-22 minutes.

Honestly, I do make my own sometimes (cut sweet potato into thin strips, toss with olive oil, sprinkle with seasoning salt, and bake until done), but the ones from Trader Joe's are SO good!

How do you make lentil burgers?
Thanks.

Here is the recipe for lentil burgers. This comes from Mary Ann (momtomany) originally. These are so tasty! I think it is the parcooked onions together with the sage...YUM!

1 cup lentils, cooked
1 cup grapenuts
chopped onions
2 tablespoons olive oil
1 teas sage
chopped parsley
2 eggs
1 teas salt
pepper

Run cooked lentils thru food mill or processor. Combine pureed lentils with other ingredients. Form into patties. Cook on oiled griddle until browned on one side. Turn over and cook the other side until brown.

I am not Lisa, but I can tell you how to make sweet potato fries

I just peel the sweet potatoes and cut them like fries. I then toss them with olive oil until coated all over and then put them on a lightly oiled baking sheet. Bake at 425 until done. These are super yum. I LOVE it when they get burned on the edges!

Too sick to cook. My DD (11) made taco meat and put it in the crockpot. She heated up those fresh tortillas from Costco and got all the fixens.

Seriously??? That sounds so cool!

It was! And the best part was I managed to not micromange them when they made the dragon, just gave some helpul instructions and went to put the littles to bed which takes a while, and the dragon turned out great! They made homemade confetti and 5 kids did the dragon while one threw confetti.

Dinner ended up being all Chinese delivery since when I went to make dinner, Bill and I realized he had forgotten to buy ANY vegetables to put in the fried rice.

Why didn't I think of that? We underbought so we rounded out the meal with Vietnamese dessert--fruit. Brownies would have been so yummy....

Thank you Beth and Lisa...this sounds scrumptious! I don't have a Trader Joe's (that option sounds like my fav!) but they sound easy enough to try anyway! I'm going to try it with my Friday meal...I guess I'll save that for the Friday thread.

And, thank you Maryan for the cultural lesson of the day ...linking the historical Chinese love for Brownies and whipping cream so that next year I will know to make Brownies for the Chinese New Year! Amazingly, tradition holds that St. Thomas Aquinas (whose feast is this Wednesday) was also a great connoisseur of the Brownie...coincidentally, he was also a great admirer of whipped cream.

Oh see... I didn't know that about St. Thomas Aquinas. Good thing you shared that!

Incidently, MC introduced us to sweet potatoe fries... and they are a huge hit here with several of my kids! One child just refuses to like things that are orange.

Maryan, I was trying to remember how I made those. There is a recipe for sweet potato fries in the newest Barefoot Contessa cookbook, it uses maple syrup.

As for Chinese New Year, we are going to celebrate later this week. But that is another post.

We don't have a Trader Joe's around here, but we have discovered McCains sweet potato fries a few weeks ago and they are yummy!

I would love to make sweet potato fries from scratch, but I have a very hard time finding sweet potatoes as opposed to yams.

Ummm, how would one know if she was looking at sweet potatoes or yams in her potato basket? I assumed these were sweet potatoes. Will the recipe not work if they are yams? Help!

Lisa - you and I are on the same page! I use the same fries - all the children especially the baby LOVE them - our freezer is stocked full!!

I thought that what I was using were sweet potatoes, but perhaps they are not. I am using the ones that are orange in the inside, not the white ones, which I have never used, nor tasted as far as I know.

My grandpa was the Sweet Potato King of South Texas! Sadly, he never taught me the difference between a sweet potato and a yam. According to this website I do have sweet potatoes but I am wondering how yams would alter a sweet potato recipe.

Is there a difference between sweet potatoes and yams?   I use the term interchangeably!!

If they are different, I think I have used both to make our fries... and didn't notice a difference at all!

I just went in and checked my "sweet potatoes," for that is what the sign at the market declared them to be. Lo and behold, there is a sticker right on one of the tubers that says that it is an "American Beauty Organic Yam." "Sweet Potato" is a much prettier name than "Yam," so I will continue to refer to all orange tubers in my pantry as "sweet potatoes!"
