Today, I am really going to cook that pork tenderloin that has been defrosting in my fridge the past few days.

If you are looking for a recipe, this one is a favorite around here. Don't worry about marinating overnight. I have marinated for as little as 4 hours before and it was still delicious!
Teriyaki Tenderloin
* 5 tablespoons low-sodium soy sauce
* 2 tablespoons olive oil
* 2 garlic cloves, minced
* 2 teaspoons brown sugar
* 1 teaspoon ground ginger
* 1 teaspoon coarsely ground pepper
* 2 (1 pound) pork tenderloins
DIRECTIONS
1. In a large resealable plastic bag, combine the first six ingredients; add pork. Seal bag and turn to coat; refrigerate for 8 hours or overnight.
2. Drain and discard marinade. Place the tenderloins in an 11-in. x 7-in. x 2-in. baking pan coated with nonstick cooking spray. Bake, uncovered, at 425 degrees F for 25-35 minutes or until a meat thermometer reads 160 degrees F. Let stand for 5 minutes before slicing. Serve with pan drippings.

Something with boneless skinless chicken breasts I got yesterday (while we raise our own meat birds, making boneless breasts is not something I've managed yet, lol).

ETA: Okay it is now noon. I'm thinking I am going to simply pan fry these things. I've got leftover gravy from the other night, and I realllllly like that gravy. I'd hate for it to go to waste. So I'll whip up some mashed potatoes, and something nummy for dessert (the donuts are gone...surprise surprise on that one, lol).

Dh works through dinner tonight so it will be a rare, totally kid oriented treat. I like to cater to them on nights like this - easy for me, and a treat for them to make up for Daddy's long hours away. Typically it's followed by Little House on the Prairie on DVD. (Oh no Mom! Carrie's down the well again!! )

We're having a young priest friend over for dinner to celebrate his birthday. Dh is slow cokking ribs on his monster rotisserie, my contributions are seven grain rice with sweet apple chicken sausage and green beans, 5 minute artisan bread, and our favorite chocolate cake with Mocha Frosting:
MOCHA FROSTING
3 tablespoons butter or margarine
3 tablespoons HERSHEY'S Cocoa
1 tablespoon warm water
1 tablespoon coffee liqueur or 2 teaspoons powdered instant coffee
dissolved in 1 tablespoon warm water
1-1/2 cups powdered sugar
1. Melt butter in small saucepan over low heat. Stir in cocoa, water and liqueur. Remove from heat.
2. Gradually add powdered sugar, beating until of spreading consistency. Add additional warm water if needed.

My plan is to make homemade (gluten-free) cheese pizzas. We have K4J Club late this afternoon and I've been horrible in the past about getting dinner prepped so we don't "have to" eat fast food on these days. I am determined to get the dough done this afternoon and the pizzas baked before we go so that it is all ready to serve up when we return.

I stopped by a friend's last night to drop off a CD and they were making a heavenly smelling salmon chowder. I've never made it but Google a recipe. It smelled fanastic!
