We have recently switched to meatless soup on Fridays so tonight it's potato.

Since it is totally freezing today, I'm planning to whip up some of Mary G's quick whole wheat bread even though it goes against my nature to serve potatoes AND bread at the same meal.

Yep, still no green vegetables here.

Frozen pizza for the kids b/c I remembered to buy some yesterday!

And later since DH has to work late, a veggie plate assortment for us: some boiled potatoes, some broccoli, some mixed veggies, some creamed spinach with tomatoes, and a little rice pilaf (it's an organic basmati mix with only 20 milligrams of sodium per serving) to go with it all.

(The kids enthusiastically agreed just now they'd rather have the pizza, though sometimes we all do the veggies together.)

We are having a big pot of seafood gumbo served over brown basmati rice...lump crabmeat, crab claws, fresh shrimp, and okra, so it's even got green veggie covered with potato salad and warm french bread...that's a lot of starch and I'll have to pick and choose wisely, but it's a great Cajun tradition and will keep the kitchen toasty and smelling great all day today.

Vanilla Pudding

3/4 c sugar (way too much!)
1/4 c corn starch
1/4 t salt (I don't measure, just add a pinch)

3   T butter (I don't use any)
1   T vanilla

Combine dry ingredients in saucepan. Add milk. Stir and heat over med to med high heat until thick. I stir constantly for the most part. Remove from heat. Add butter and vanilla. Stir, pour into a bowl and chill.

For chocolate, follow vanilla recipe except add 1/4 c cocoa to the dry ingredients and use only 1 t of vanilla.

For extra rich chocolate, follow vanilla recipe except add 1/3 c cocoa to dry ingredients and only 1 t of vanilla.

NOTE: For my chocolate pudding I use a scant 1/3 c of sugar and a heaping 1/3 of a cup of cocoa (probably close to 1/2 c). It is really nice this way and has a hint of chocolate flavor ;) Also, I never use the butter as I couldn't really see a difference. And now we LOVE it topped with real whipped cream. YUM! Enjoy!

When I make the vanilla for my dd, I use
1 scant Tbl of sugar
1 Tbl of corn starch
pinch of salt
1/2 c milk
1 tsp of vanilla

I also have substituted the vanilla for other things like rose water or lemon extract (not so good, I would do lemon juice next time).
