Today is my dh's birthday!! The other day he picked up a box of shrimp scampi at Costco (of course, do we shop anywhere else?) I am hoping to swing by Trader Joe's and pick up a flat iron steak and key lime pie. So our menu tonight is scrimp scampi over pasta, flat iron steak, salad, another veggie of some sort and key lime pie.
I usually make key lime pie but that is just not happening today, maybe on Sunday for our anniversary. Oh and my sweet dh will probably have to do most of the cooking as I have CGS this afternoon.

I need to use up a cabbage. We've never tried this before, so it should be interesting.
Bob's Lambasa Stew
Makes: 4
Preparation time: 20 minutes
Cooking time: 4 to 10 hours
3 medium sliced carrots
3 medium peeled and cubed potatoes
4 cups coarsely chopped cabbage
1 pound sliced reduced-fat kielbasa
1/2 teaspoon each dried basil, dried thyme and pepper
2 (14 1/2-ounce) cans fat-free chicken broth
Place carrots, potatoes and cabbage in a 4-quart slow cooker. Top with sausage. Sprinkle with basil, thyme and pepper; pour chicken broth over all. Cover and cook on high 4 to 5 hours or low 8 to 10 hours or until potatoes and carrots are tender. (Adapted from Hometown Cooking magazine.)

I was wondering when I would see Thursday night dinners! So much inspiration!
We are having potato soup, a big salad, and homemade bread. We have rainy weather and practices tonight, so it will be a quick meal.

More leftovers here: polenta topped with a shredded beef and melted mozzarella cheese, potato salad, cooked carrots, green salad. I'm going to bake some plain apple slices for my littles to have on the side. And I'm hoping to make some fudge this afternoon--I'm 39 weeks pregnant and going through serious post-holiday sugar deprivation here lately.

Celeste, I've always been intrigued by ploenta but never tried it - how do you make it?
Patty, we have that cabbage dish here regularly - it's yum and especially loved by the menfolk here.
We will be having baked ziti and salad - made by oldest dd.

Pepperocini Beef here.
Toss a chuck roast in the slow cooker with garlic and a jar (juice and all) of pepperocinis. We've been on a pepper kick lately, can't get enough of 'em - yum!
I have some fresh thyme to use up, so maybe cooked baby carrots and thyme on the side?

That's good to know. We're a cabbage loving family, but there aren't enough of us to eat an entire cabbage in one go. Last week our cabbage dish was a ham, potatoes and cabbage skillet dinner.

I used to make it the old-fashioned way (my grandma's recipe) on the stovetop, but it takes forever. I was so happy to find a crock pot recipe for polenta that surprisingly tastes really great and has a nice texture. It's from Not Your Mother's Slow Cooker Cookbook (this is my shortened version):
Combine
7 1/2 cups water
1 1/2 cups polenta
1 1/2 t. salt
in the crock pot. Cover and cook on high for 30 minutes to one hour to heat the water. Stir, cover, turn to low, and cook about five more hours, stirring occasionally with wooden spoon. Polenta will thicken quickly after two hours and look done but will need the extra time to cook evenly. At five hours, taste. When done, it will be smooth and pourable, and a wooden spoon will stand up by itself in the polenta without falling over. Polenta will be fine on low for another hour. Add hot water if it gets too stiff.
(They suggest adding 1/2 cup butter and 1 cup parmesan to finish, but I usually leave it plain to be "dressed up" later. You can serve it hot with butter/olive oil and cheese, or let it cool and pour it into a dish to harden. It can be reheated to soften at that point or cut into slices and eaten that way.)
I am loving all this inspiration too. And that key lime pie is making my mouth water!

My dad has requested a biscuits and sausage gravy dinner this week. Tonight is the night. The girls will eat apple sauce, too. I will also make a salad, although I am not sure if it works together????

I'm a bit late, but we had Thai prawn curry with courgettes, mushrooms and spinach over brown rice and quinoa, followed by green salad.
All those minerals, hooray!

Pork chops...some sort of vegetable (corn? Peas?) and a starch (probably egg noodles). We have homemade (incl home canned apple pie filling) apple pie, and Fried Ice Cream flavored (cinnamon and caramel mixed into vanilla ice cream) from Braums--hot caramel sauce if anyone wants it...

We ended up with hamburger patties in gravy with mashed potatoes and sliced peaches for dinner and a chocolate cake with chocolate frosting (and green sprinkles) for dessert.
