Okay, so I got creative since I had the chicken in the crockpot and made Tyler Florence's ultimate coleslaw with pecans and spicy chile dressing. I altered it for what I had on hand but it's really good!

Ingredients:
One bag of coleslaw shreds, 1 thinly sliced Macintosh apple (called for 2 Granny Smiths), 1 cup toasted pecans, chopped. It also called for red onion that I didn't have.

Dressing:
1 T. Dijon mustard ( I substituted Ken's lite honey dijon dressing)
1/2 t. cayenne
1/2 t. ground cumin
3/4 c. mayo ( I didn't have enough so used part Miracle WHip)
juice of 1 lemon
salt and pepper
It also called for 1 tsp. sugar but since I used the Ken's dressing I didn't add it.

Mix the veggies, apples and pecans well before adding coleslaw dressing.
mix with your hands. Yum!

This is an interesting board. Posting dinner. OK - Tonight we had fish to which all day I heard a never ever litany of "but it's not Friday". What have I done??

It was yummy. Layer scallop potatoes slices (about 1 1/2 lbs), onions slivers, olive oil & seasoning for three layers. Top with sliced tomatoes. Cover tightly. Baked 350 until almost tender (took me close to an hour). Then I put a pound and a half of cod on top brushed with olive oil, sprinkled with thyme, majoram and rosemary.   Squeezed half a lemon and poured over a half cup white wine. Your supposed to add a little bread crumbs but I was too lazy. Baked another 25 mimutes basting frequently. It was very yummy. They stopped complaining. Serve with sourdough wheat bread to sop up the delcious juices.
