BTW - I do not have a pizza peel (yet?) - used a flat cutting board and rolled it onto my Pampered Chef stone.

I've been using this book since last summer, and we've never had a disappointment!

I don't have a pizza peel, and my stone broke in half from overuse

What I do now is leave the dough to rise on a cookie sheet lined with parchment paper, then pop the whole thing into the oven. I've never had a problem with sticking, and I find it much safer than trying to transfer the dough to the pizza peel. I don't even use the steam, as I don't have a broiler pan.

And a little PS: Hubby makes the most incredible calzones from the pizza dough! They freeze nicely, and taste fresh from the oven when thawed and warmed up- great for his lunches at work!
