We use cast iron as well. I have a big Lodge Logic double burner skillet that I use to make pancakes and I love it. It heats evenly enough that I can make 3 pancakes at a time on it and it does fine. We don't use non-stick either for all the reasons mentioned above. I just feel, better safe than sorry and the cast iron works just as well for me!

Not to mention that cast iron literally lasts for a lifetime.. it gets better with age (or can be stripped and reseasoned) rather than needing constant replacing.

Cay, I have not done the reresearch that Tracy has, but I always wonder when looking at an older non-stick pan--where did all the coating go?

Cast iron here for a few, range griddle when we have a crowd. Make sure a drop of water can dance on the pan surface before making your pancakes and the first pancake is often for the animals because it never turns out well (at least it did not until I used my cast iron.)

I used my new Lodge cast iron griddle today to make pancakes for lunch, and they turned out great! I've never cooked on cast iron before, but absolutely hate my electric "nonstick" griddle.

I bought a double burner griddle and only made 4 pancakes at a time, but I think six would have been very do-able. The best part was that I still had all of my counter space clear for the batter bowl, plates, butter, syrups, etc. And the griddle heated very evenly on my gas burners.

All makes sense to me. Thank you, ladies.

We have a cast-iron Dutch oven that dh uses every weekend when he cooks. He loves it. The cleaning of it was what I never liked...thus my love for non-stick.

But last week I did use it to make a shrimp creole and the whole family said I "nailed it"! I think the cast iron pot had a lot to do with it.

Then that night dh went to bed early and I had forgotten to ask him about cleaning it properly. So I scrubbed it good, warmed the oven, and stuck it in there. Then next morning I rubbed it down well with veg oil and it's good to go.

I'll be thinking of all this info next time I cook pancakes.

Cay, I find cast iron to be easy enough to clean.. we don't use soap since the cast iron is porous.. just scrub it clean with hot water.. then I set mine on the burner with heat until it's dry.. the wipe it down with oil while hot.

Can I chime in and ask......I have a flat top. Does the cast iron double griddle work on flat tops? I assumed not, and bought an electric non-stick griddle. It works great, but I prefer to use cast iron.

flat tops.. it depends.. I know there are some that using cast iron voids the warranty.. cast iron is also more likely to scratch.. and it can concentrate too much heat (because you can use such high heat with cast iron.. that can be negated by just using lower heat)

I have a cast iron griddle top for my stove that is 30 inches by 15 inches. Plenty big for pancakes for a horde. Also seasoned properly I can cook glutton free pancakes on it with no problem, and they are notoriously sticky.

I've been meaning to pop back over here to update that after a month I absolutely LOVE this griddle! I use it all the time for pancakes, fried eggs and grilled cheese. I also bought the big skillet and love it, too. I never owned cast iron before, but I'm a believer now!
