Erin,

The egg issue is salmonella poinsoning, since the egg whites are not cooked for the royal icing. It sounds like this must not be a problem in Australia (how lucky for your kids to be able to lick the cookie dough/cake batter out of the bowl). Plenty of people here do use egg whites without incidence; I just prefer not to take chances, especially since we often invite friends to do the gbread house with us, and choose to substitute meringue powder for the egg whites in the royal frosting.

Sorry if that was confusing.

Have fun with the house. If you don't get around to it for Christmas, you can always do a Valentine's Day or Easter/Spring house. It doesn't have to be only for Christmas.

That is the reason, but I am confused. I was under the impression that eggs by nature carry the possibility of salmonella. Is it just the way chickens are fed/raised in the US that eggs carry the possibility of it and they are safe in Australia, or is it that people just don't worry about it down there?

Salmonella is just not as wide-spread in our chook populations, so it doesn't occur as often.

Our gingerbread houses are for the fun of building and the beauty of display. We do not eat them, and as such, I use my secret weapon to happy gingerbread house construction:

hot glue gun

The hot glue gun makes sticking the walls together in a sturdy manner a breeze. I use the hot glue for putting on the candy too, but sometimes the kids still use the frosting to stick the candy on. Then we use the white royal icing for decorating as icicles, etc.

Also, I purchase all the candy and gingerbread house kits at the after Christmas sales and store in a Rubbermaid tub. Because we aren't eating these houses, year-old candy is not an issue. I just bought our kits for next year at Walgreens for $2.50 each. Who wants to bake at that price

What a great idea, but that wouldn't sell with dh or ds. It's all about the eating, too! I never understood that aspect, so your method would work for me!
