I've been following the thread with interest but haven't commented. Everytime the thread comes up in my box I think "Rachel Ray" and a cooking tamales show!
Anyway, I am very gringo but I do make tamales. But obviously not really authentically because I just do it in one day, so I'm sure the meat/chile mixture is not as good as it could be with the advance cooking.
The resource that I have used for recipe and instructions is Josefina's Cook Book from the American Girls Pastimes books. There are some variations from authentic (like using corn oil instead of lard or shortening in the masa) but the result is good. Since these cookbooks are geared toward younger cooks the directions are very step by step and there are great pictures acompanying the text. I find it really helpful. (And there are other great Mexican recipes included as well.)

I really like Josefina's Cookbook. A recipe we still use all the time is the yellow squash saute - delicious!
I think I'll grab that lady's number tomorrow and give her tamales a try! It'll be fun.

Michaela, How did yours turn out? I'm printing today so I can make them for Sunday. I had leftover turkey and then a neighbor brought over a venison ham so that's what's going in this year. We'll see how they taste.

My hubby took over Tamale Time this year. I was too slow getting started and his taste buds were ready. They turned out great.
I'm sure your tamales will taste wonderful, Rachel. The meat combination sounds so interesting!
I thought I was being creative using leftover turkey in Mole' instead of the customary chicken. Turkey in tamales will taste delish!

Yes, this is an old thread, but I always think of the help I received here when we decided to make tamales on our own.
A big THANK YOU.
Tamales bring childhood memories to my DH and I always think of my helpful 4Real friends.

I'm cheating this year.. my MIL sent some tamales home with us at Thanksgiving and they're just waiting in the freezer.. we'll have them on the 1st with pozole and chile verde
