My favorite from when I was little:
"Spanish Rice"
brown 1 pound ground beef, drain
add 3 tablespoons of chili powder, 1 can of tomato sauce (15 oz- used to be 16,) 1 can of tomato paste, and, using the tomato paste can, 1 can of water.
Simmer for about 10 or so minutes and all heated.
Serve over rice (we've used Minute Rice for extra quick meals.)
Now that we have 6ds, I double the recipe. I make alot of rice, too.
I usually serve it with bread, carrots (raw sticks,) and a salad.

Salmon on the grill is great. I stuck it on some aluminum foil with butter, fresh garlic and a touch of soy sauce.
I do roasts in the crockpot all the time - with a twist. I put them in frozen, on low, when we go to bed at night (I'm a night owl) and it is done in time for dinner . I generally boil any potatoes or carrots seperately and when they are softened, I dump them in the crock pot with the rest and serve with some green beans/ a salad whichever is convenient for the day.

I am all into the crockpot cooking.....easy pregnancy one, Baked Potatoes! Wash,poke, add 1/2 cup water, and let them bake. Let the family choose toppings, cheese , chili, veggies etc. big hit here!! Just use your left overs to make a buffet over baked potatoes!
Also pancakes are often served during morning sickness at my house, we are very creative with the toppings and the dc think it great fun!

This isn't a meal but just a general food prep tip. I like to buy ground beef in bulk (usually 2 packages 4 lbs each) and then divide them into 1 lb chunks. I put these chunks into ziploc freezer bags and SQUISH them flat keeping as much as the air out as possible. I freeze them and then they are ready for a weeks worth of kid-friendly menus- meatloaf one night, tacos the next, meatballs, baked ziti, etc. etc. Since they are flat they are able to defrost in ten minutes in a sink full of warm water. This allows for last minute planning...which seems to happen all the time around here in spite of my best intentions.

Here is a favorite quickie around my house:
Taco Soup
Brown 1 lb ground beef (I always double this recipe as it is so easy to make and freeze) with one medium onion, chopped
In a soup pot, combine beef, 1 can each of black beans, kidney beans, pinto beans, navy beans, hominy or corn, and diced tomatoes. Add water until everything is covered (a hearty soup consistency) and mix in one packet taco seasoning and one packet ranch dressing mix. Cook for 20 minutes or so for flavors to blend.
I put out cheese, salsa, and sour cream to top it off when served.
I rarely cook from cans any more, but this staple we can't do without!

My favorite super easy meal is reheated Costco rotisserie chicken. It's delicious and very reasonably priced for a convenience meal. I reheat it in the microwave and serve it with a salad or other green veggie and applesauce.
Our favorite easy crockpot meal is Soft Chicken Tacos. I put frozen chicken breasts in the crockpot along with taco seasoning and some water. About 3/4 of the way through cooking, I shred the chicken with two forks. It's that easy. I serve it on flour tortillas with some combination of lettuce, shredded cheese, tomatoes, salsa, and sour cream. I tend to serve canned peaches or fruit salad with this.

And has lots of other good suggestions!

Oh, and I just remembered another new favorite -- meatball subs. I microwave storebought frozen meatballs in pasta sauce from a jar. Then I slice them in half and cover one side of a hoagie roll with meatballs and some sauce. Sliced mozzarella cheese goes on the other side of the roll. Broil in the oven for a few minutes to heat a bit and melt the cheese. Everyone loves this here.

Irene, we have discovered meatball subs too. Everyone loves them here too.
A Peruvian favorite is salchi-papa. Basically hot dogs and french fries. I make frozen french fries and boil hotdogs. You cut up the hotdogs and toss it together in a big bowl with the fries. In Peru they also put corn kernels in, but my kids prefer the corn on the side. I serve it with homemade coleslaw (which is a precut bag of slaw with homemade dressing, recipe off the bag tweaked a bit).

easy chicken enchiladas...
tortillas, corn
jack cheese, shredded about 2 cups
chicken shredded. sometimes I use canned chicken when I am in a big hurry.
green chile sauce
evaporated milk
rip tortillas into a 13x9 pan/dish
dump in chicken and cheese
mix or toss together
pour in about half a can of the milk
and about a cup or more of the green sauce.
bake at 350 for about 25 mins or until bubbly
let sit for ten minutes
enjoy!

Chicken and cheese burritos on the George Forman grill. If I'm in a big hurry, I used canned chicken. Toss some chicken and mexican blend shredded cheese into a tortilla, roll it up and grill it for a couple minutes. Serve with sour cream & salsa, and a small salad.

Here's my quickie:
Mexican Rice and Beans
Uncle Ben's Mexican Fiesta (Shopper's Food Warehouse has)
Can of Black Beans
Can of Corn
Make the rice (10 minutes)
Heat up corn and drained/rinsed beans in a casserole dish)
Optional: sprinkle with cumin and lime juice
Pour rice over beans and corn, top with Mexican cheese mix. Serve with salsa and sour cream (and/or lettuce, tomato, guacamole etc.)
It's essentially a pantry meal (except for the cheese which we ALWAYS have)... and takes 15 minutes.
BTW -- I've tried other rice mixes, but this tastes the best and has no MSG.

We're now done with the chicken pox but one night during our bout, I bought 2 chickens and 2 bags Fresh Express Asian Supreme Salad kits (on sale) and I made Chinese Chicken Salad.
There was very, very little left...
Last night, I bought pork shoulder strips and slow-cooked them in BBQ sauce. I served them with french fries and fresh cantaloupe - YUMMY!

This one is really fast to make and enjoyable:
Spicy Sausage and Peppers Penne
8 oz penne pasta (or your choice similar) (ETA: I use whole box - makes more!)
1 lb sausage (hot/mild/turkey, your choice)
1 each: yellow, green, red bell pepper, cut into strips
1/2 cup chopped onion
2 cloves garlic
1 can diced tomatoes in sauce
1 can tomato sauce
2 tsp Italian seasoning
Grated Parmesan Cheese (eyeballed :)
Cook pasta. Cook sausage in skillet (14-16 minutes) until browned. Remove and slice. In the same pan, cook peppers, onion and garlic (pressed or chopped). Add the cans, sausage, and seasoning. When heated, combine with pasta and top with cheese.

How funny, Fuzzy!
I just made something very similar for lunch here!
I bought sweet turkey sausage, browned it, sliced it and added it to pasta with an alfredo sauce. Topped with parmesan and paired with caesar salad!

Sounds yummy both ways! I am making this for dinner, so it was fresh in my head.
I am NOT the mother of invention, so I am all about recipes. This is from my "healthy" PC cookbook.
I agree, we do need a lip-smacking emoticon. All this talk of food on the boards, they should add one.
