Do you have puff pastry? You could make some quick apple turnovers... mix up chopped apples, some dried fruit like raisins or cranberries, sugar+lemon juice, or honey or maple syrup or a couple tablespoons of jelly for sweetener, nuts if you like. Cut the puff pastry into squares, stuff with the apple mixture and fold into triangles, press down to seal with the tines of a fork. Poke holes using the fork or make a couple of decorative cuts with a knife. If you like you can brush with beaten egg white and sprinkle with sugar, or leave plain. Bake 20-25 minutes or so at 400 degrees F.

Or if you want something simpler, core the apples, slice them into rings but keep them together. In a baking pan stack the apple slices so the apple is "re-formed", put a cinnamon stick inside. Drizzle with melted butter+lemon juice+ maple syrup or honey or brown sugar +sprinkle with cinnamon and nutmeg. Bake for 45 minutes at 350 degrees, basting with juices every 10 minutes or so -- cover loosely with foil if browning too quickly. You can also use chopped nuts or dried fruit or candied ginger and even some brandy or rum for the filling, in place of or together with the cinnamon stick.

I always make Apple Crisp:

Slice enough apples to fill a 1 1/2 quart casserole. Toss with a bit of lemon juice, and honey if desired. (I usually omit the honey.) Mix 1 cup of all-purpose flour, 1/2 cup brown sugar, 1/2 teaspoon salt, and then cut in one stick of butter. Spread crumb topping over apples, and bake at 375 for 40 minutes, or until top is golden and apples are fork-tender.

Oh, and you can easily double the topping and fill a bigger casserole.
