LOL I was at Elizabeth's blog reading away and I got hungry for granola...

Does anyone have a good recipe that is at least somewhat healthy and maybe also one with alternative grains (but not necessary)

I loove granola...it has been awhile...time to fix that!

Hi Donna Marie

Our family special granola recipe is very simple - the kids eat it in large quantities - often layered with yogurt and fruit.

8 cups rolled oats
1 cup unsweetened unsulphured coconut
1 cup raisins (or any other dried fruit chopped)
half cup maple syrup (or honey)
half cup coconut oil (can use olive)
2 tsp vanilla (optional)
1 tsp cinnamon (optional)

Mix oats and coconut in large mixing bowl. Warm maple syrup and coconut oil. Blend in vanilla and cinnamon if using. Stir into oat mixture until well blended. Spread evenly onto two 9x13 baking sheets and bake at 300 for 20-30 minutes. Check and stir well every 10 minutes. Add raisins/dried fruit after baking is done.

(note - you can add roasted nuts, seeds, ground flax, wheatgerm etc once baking is done - I do not do as I have kids with nut and seed allergies. You can also add protein powder to the oats before baking - we have soy allergies so I have to get some whey protein)

We make a lot of granola, with similar recipes to those listed above. One granola making trick I picked up is to roast the grains, seeds, and nuts before adding wet ingredients. (Place on a cookie sheet in a 350 oven until you can smell the roasting - will depend on amount of grain/seed/nut and oven. Check every few minutes and look for slight browning.) While roasting, I put my wets (sweetener, oil, water, spices) in a big pot on the stove until bubbly. I add the roasted grains to the warm mixture then place all again on the cookied sheet and bake for a few more minutes.

The roasting takes care of two of my granola making problems. One, if I undercooked, my granola tasted "raw." Two, if I overcooked to take care of the raw taste, I would burn the granola. Roasting makes the recipe so much more flexible...and I like the added depth of flavor.

I use a variety of grains. In general, I like to keep the ratio of at least one cup rolled oats to one cup other rolled grain (wheat, rye, barley, mixed rolled 7 or 12 grain cereal, etc.)
