Greetings, Friends! What’s for dinner this week?

Monday--Leftover ham and potatoes fashioned into some kind of potato cakes.

Tuesday--Spaghetti, sauce in the crockpot

Wednesday--Soup with ham and lentils

Thursday--Hamburger skillet dinner

Friday--Salmon cakes....haven’t tried them yet, will report back how they turn out.

Saturday--Roast with potatoes, carrots

Sunday--leftovers, and pumpkin bread

Not settled on our menu for the week yet, but if you're looking for a good easy salmon cakes recipe we've made these for years and they get rave reviews. They're a fan favorite of everyone. EDITED TO ADD--We have to triple this recipe for my family.

Our menu will include:
-Spaghetti Squash primavera

-meatloaf and mashed potatoes

-fajitas

-probably salmon cakes now (thanks for the suggestion!)

and other things I haven't figured out yet!

I found this simple ham and potato soup recipe...yumm!!

Aldi’s had their already very cheap hams from the holidays for an additional $5 off!! We will be eating some ham in the come weeks!

We're still getting meals from other families 2x a week, and dh is still doing the cooking. But we've been relying more on hams and other foods that give leftovers. Someone gave us a Honeybaked Ham gift card, so we have that for tonight...and maybe another night or two.

Snow is in the forecast, and since our area can't handle the snow, it's a joyful time for us to hunker down and enjoy. We may or may not have a meal brought tomorrow, weather dependent, so ham it might be two nights in a row.

I think we'll probably have hamburgers or tacos, and fish on Friday. One takeout meal on Saturday?

It will be hard to ease back into meal planning and cooking. I'm thinking I'm not quite ready yet.

Ugh - I am not looking forward to the snow and cold. Rather concerned about the March for Life too. Also trying to eat nutritiously and avoid all the nasty flu bugs all around us.

Monday - ground beef and black bean burritoes

Tuesday - honey mustard curried chicken, rice and broccoli

Wednesday - quinoa and black beans

Thursday - forty clove chicken, rice and green beans

Friday - lentil and leek risotto

Saturday - apple chicken sausage, peppers and pasta

Sunday - maple chicken, roast potatoes, roast vegetables

Sure! I made it for the first time last week and everyone wanted to have it again, so I call that a win!

I just cubed the chicken, lightly floured it, and then fried it in a bit of coconut oil. PF Chang's doesn't seem to have much breading or anything, so I think that worked. Then you could toss it with the sauce, or serve it separately, which is what we ended up doing. Here's my version of the sauce:

Orange Peel Sauce (for 3 chicken breasts, about 2 lbs):
1/2 cup chili sauce
1/4 cup orange juice
2 T. brown sugar
1/2 T. Sriracha (more if you like, but this way it's got a teeny bit of heat, but my 2-year-old still liked it)
1/2 T. soy sauce
sliced green onions (okay, I forgot these, but I think they'd be a good addition)
zest of one orange

If I had remembered the green onions, I would have sauteed them first in a bit of oil, then add the rest of the sauce ingredients and heat through.

We served it with rice and asian coleslaw. You'll have to let me know how you think it compares. I think mine might be a bit more orange-y than theirs, which we like.

I was doing pretty well with my Fall meal plans until the holidays hit, and I've been limping along a bit.

What was working well was having 1 double meal, one designated soup day, a smorgasbord day with an optional easy pantry meal, and meatless Fridays.

Today, I put chicken thighs in the crockpot and chicken back in the giant pot for stock, though I'm not sure exactly what is for dinner. We may or may not be having company.

Then tomorrow is soup day (not sure what kind, but I'll have stock ), Wednesday is chicken tamale skillet bake, Thursday is smorgasbord or potatoes with kielbasa and sauerkraut, and Friday is...hmmm. Not sure.

It is easier to throw something of a plan together, though, when you find that skeleton that works. For some it is "Italian night" or "Mexican night," but I find that categorizing by cooking technique is a little easier for me.

Lindsay, can you share your potatoes and kielbasa and sauerkraut secrets? Dh would love that. I have some kielbasa in the freezer from the farmer. Do you make your own sauerkraut? How do you do the potatoes?

It is something my MIL makes frequently. I have made my own sauerkraut, but this cooks for so long, I wouldn't bother using raw, fermented sauerkraut.

I peel and cut the potatoes into a largish dice, slice the kielbasa into coins, and add a jar (or can or bag) of sauerkraut and some caraway seeds. The sauerkraut and sausage are usually salty enough. You can rinse the sauerkraut depending on how salty your sauerkraut is and how much you like it, but MIL and I do not rinse.

Now, the last time I made it, I thought that something sweet would be a good addition, and I peeled and chopped two apples along with the potatoes, and it was really good! Dh admitted it was an improvement

It is probably 3 lbs of potatoes to 1 lb of sausage to 1 jar of kraut. It just simmers until the potatoes are soft. The kraut usually has enough water, but if you drain and rinse the kraut, I'm guessing you'd want to add some water.

ETA: Forgot the bay leaf!

Thanks, Lindsay! I never did it with potatoes, but I used to throw in the chopped apples. Dh has the German background like yours, so he's been asking for something like that. I used to be obliging, but started to question the healthiness of purchased sauerkraut, so I wasn't sure. I never rinsed mine, either.

I didn't discover sauerkraut until my adult years. I thought it was the grossest thing and never tried it. And then, after my first mouthful I was sold. I love the taste of sour pickles, so I've been missing out for many years!

I've never cooked the sauerkraut with potatoes but I've done a potato soup with kielbasa and carrots in it.

The potatoes make it a nice winter one pot meal.

We just found a nice, local brand of sauerkraut that is just cabbage and salt. It isn't hard to make, really, bubbies is an excellent brand, too. We just tried the local stuff when they were out of Bubbies. They make the best dill pickles, too. Both are found in the refrigerator section.

Well the weather has been so nice here.. we decided bbq chicken sounded good (chicken is on sale this week) and I'll make a pasta salad, green salad, maybe some garlic bread.

something easy for Tuesday.. usually a burrito variation, maybe tacos

and Wednesday we'll see how leftovers are being used up and have a leftover night if there's enough.

Today - tortellini and marinara sauce

Tuesday - Chili (I made it tonight, in case I have to shovel snow all day tomorrow) OR oven-roasted potatoes, veggies and kielbasa

Wednesday - Whatever we don't have on Tuesday

Thursday - ??? Maybe orange peel chicken!

Friday - Lentil soup is a likely choice

Saturday - not sure; big dress rehearsal for Dancing Daughter, so it will be a chaotic day

Sunday - Maybe this salsa verde chicken recipe - it looks yummy, and I have all the ingredients!

I made the orange chicken above for lunch today and it was very good, but VERY spicy for us. I used only 1 tsp of the Siracha sauce instead of 1/2 a T and it was too spicy for any of my kids. (my husband and I like it though!) So when I make it next I'm going to just add a splash of it instead.
