What are your favorite recipes to celebrate Easter? Do you make the same foods each year? Do you look for new recipes? Do you prepare the whole meal or make some as part of a pot luck? What else?!
We go to our dear friend's for Easter and bring side dishes.
We are requested to bring Easy Corn Pudding (Isn't it funny how traditions start?! I had no idea that when I made this years ago that it would continue as a fave.)
I'll bring cole slaw.
For dessert I'm considering a Three Berry Lemon Trifle.
I'll also bring plain mashed potatoes (because my men prefer them to the fancy potatoes,  .)
Personally for me, it is all about the ham. And dessert  .

Well for Good Friday we make hot cross buns.
And for Easter breakfast I like having a fruit salad available along with the candy and Easter eggs.  and I'm looking at maybe some Melon Juice with Champagne for mom and dad
I don't know if we're getting together with my sister and family or not yet.. but we tend to stick to a pretty similiar menu anyway.
Ham
Mashed Potatoes
gravy
asparagus
deviled eggs
braided bread loaf
jello
carrot sticks and olives
Then we try and have a variety of dessert items including
Kolacky
Cheese cake
pound cake
and I have a list of some other treat things that we may or may not have made by Easter Sunday but might make during the Easter season like
butterhorn cookies
chocolate eggs (with rice krispies)
cream mints
cranberry cookies
peanut butter fudge (cut up with chocolate poured on top?)
penoche
applets/cotlets/cran-lets

Ladies!
I miss having a big Easter feast with my family. My husband is from Belize, and their tradition is that Easter fasting doesn't end until sundown on Easter Monday!
Every year we give up meats and poultry in addition to something else we really enjoy. This year, we gave up meat, poultry and seafood.  Cooking vegetarian meals has been interesting, tough and fun! So, for Easter Monday, at sundown, the kids have requested fried chicken and french fries(same as the last two years) and my dear husband has requested anything seafood! This will be our feast. Oh, JodieLyn, we eat hot cross bun as a staple during lent. That's another Belizian tradition...
Thanks for sharing what you do! It has brought back some fond memories. Although I miss those things, I wouldn't change anything about the way we do things now.

We have always done a lamb roast for Easter Sunday, but lamb is just so expensive here, I'm not sure we will be able to swing it this year. Not sure what I will do to substitute for it.

We always have the same thing - ham, potatoes, rolls, some green vegetable, rum cake and sorbet (not together!). And lots of munchies before dinner. I think if I tried to change the menu my regular guests (and my kids) would riot.
I'm hosting 20+ for DD's Confirmation celebration the next weekend, so I'm hoping for inspiration from you ladies...and if you have any good vegan recipes, please let me know!

We do the hot cross buns on Good Friday, also.
I grew up having ham, potato casserole, a veggie, relish tray, rolls, etc. Now I find myself unable to eat beef or pork (a sensitivity or allergy, that I still need to see an allergist about  ,) and my boys don't all care for ham.
Our new tradition (past six or seven years) is turkey. I bought one back in December, while they were still on sale and put it in the freezer.
With the turkey, we'll have usual turkey accompaniments: gravy, mashed potatoes and rolls, also some green beans and salad, along with boiled eggs.
Nothing fancy. I just went past the gas station and nearly fainted.  It looks like cutting the food budget with Easter will only be the beginning if the gas prices don't drop.

We have a very funny Easter tradition of Leg of Lamb soup from the Nourshing Traditions cook book.
We make Leg of Lamb on Thursday night (which is actually our big meal for the Easter Season) and spend all day on Saturday preparing the soup as it takes 12 hours to make the broth. Then we add the rice and heat it up after Easter Mass on Sunday.
