I admit, all this Easter festivity has brought out bad habits. We've been going out and I have not been cooking regularly. I just now went to the grocery store to stock up, as I have postponed shopping, too (foot problems part of the reason).
I find during these transition seasons (from winter to spring, spring to summer, inactivity and cabin fever to outside and sports schedules) I need some inspiration to get a new repertoire.
It's cloudy, light rain, gloomy, and in the 50s here. I'm going to cut up a whole chicken and bake in the oven with Barbeque sauce. Trader Joes makes some wonderful BBQ sauces...and no high fructose corn syrup, and no allergens for older ds. He doesn't like the taste, but sometimes we have to make what Daddy likes.
Brown rice noodles or baked potatoes and frozen veggies for the rest of the meal.

bean soup (just pinto beans cooked up with onion and a bit of seasoning) Today is a nutty day for evening plans.. and it's looking cloudy and cool so a warm soup ready when we get home will be nice.
PLUS I'm prepping for leftovers for bean and rice burritos on Thursday

Well, I've been really spoiled the past few days. Dd-18 has been bringing home food from (culinary) school! Yesterday they had catered some pre-dinner dinner  and she came home with loads of Cajun/Creole stuff:
grilled ham
Gumbo
Jambalaya
Stuffed Pork Loin
Southwestern Strata
Blackened Chicken Breasts
There are a couple other things there that I haven't even looked at yet.
These are things that would have gone to the dumpster had she not volunteered to "rescue" them. I can't believe how much food they allow to go to waste! Although, we might have to throw out some of these too. The Gumbo and Jambalaya are way too spicy for any of us (I'll mix it up with some rice tonight to tone it down some), but I don't know how much I can doctor these before it gets icky. And the filling in the pork loin isn't appealing to anyone here. And there's way too much strata and I'm the only one eating it (allergies and just pickiness).
Already I'm looking forward to going vegetarian the next few days.

I think we're just having a regular night - boneless skinless chicken breasts poached in broth with white rice and veggies. Maybe some chicken gravy if I get to it.
Basic and easy.

I am trying to use up food from the freezer, so I made an alphabet soup with a great chicken broth I still had. The girls loved it, but it was a bit chaotic because they were trading letters during the meal so they could spell certain words on the rim of their soup plate.
Milchreis or Milkrice? was served with cinammon sugar as a dessert. This whole meal is truly a child's dream in our home. I enjoy making this kind of meal when dh is not at home.

Mimi, we really like mac and cheese for a simple meal here.. and yes from a box.. but what I usually do is serve it with steamed broccoli and meatballs.. I make these ahead so it's literally dumping the meatballs in a skillet to cook and brown.. adding sauce or not depending on mood. Those two things are simple to cook up and everyone here likes that meal.

Even though our inside and chest freezers are absolutely packed, I cannot stop myself from cooking extra meals for the freezer! I think I'm in nesting mode gone crazy! 
So...I browned three pounds of ground beef this morning:
Two days worth of enchilada pie (including tonight)
Four days worth of chili (including tomorrow)
Along with a batch of granola bars, chocolate chip cookies, and a couple apple crisps--not sure how I'm going to find room for all of this in the freezer, which was already stocked with weeks and weeks of meals and snacks.
Off to check out the new recipe index....could be dangerous!
