Oh, Dearest Mother, Sweetest Virgin of Altagracia, our Patroness. You are our Advocate and to you we recommend our needs. You are our Teacher and like disciples we come to learn from the example of your holy life. You are our Mother, and like children, we come to offer you all of the love of our hearts. Receive, dearest Mother, our offerings and listen attentively to our supplications. Amen.

It's Chicken Thursday!! We're having slow cooker chicken with balsamic vinegar sauce (very good - you add capers and black olives at the end).

No chicken here, we're having beef short ribs, braised, over basamati rice and a big green salad - YUM!

Mary Chris, care to share that chicken recipe?

Slow cooker pot roast: root veg on the bottom (turnip, carrot, potato) meat in the middle, savory veg on top (onion, celery, herbs), 1 c of beef broth over all and cook all day. It smells lovely already! :)

I made soup for our soup supper yesterday and they didn't need it...so...actually it is cold and rainy and a nice warm bowl of soup sounds pretty good right now!

While I was in the shower this morning, my husband was so sweet and made chicken salad for us from the chicken that I pulled out of the freezer for White Chicken Chili, tonight's dinner. So he had a chicken salad sandwich for lunch.

Breakfast - oatmeal

Lunch - picnic at the park for Grandma's birthday

Dinner - chicken salad sandwiches, pickles, grape tomatoes, cantaloupe and strawberries

It is a chicken day. We had chicken and mozzarella quesadillas with caramelized corn, peppers, and garlic scapes. Very yummy, very fast.

Lunch was fast food, breakfast was rice pudding, bananas, and strawberries.
