Well Monday Night Football might be over but we still need to eat. What is on your menu for tonight?

We are having Honey Mustard Chicken with Trader Joe's potato wedges and tri-colored peppers along with a salad. I have to assist with Religious Ed tonight but dh is still on leave, so guess who's cooking....not me! I am looking forward to coming home to dinner and probably a clean kitchen.

CCD here is Monday nights.. so we have a short window for eating before heading out.

One of our favorite quick meals, and what I think we'll have tonight, that the kids like to eat so that I don't have to worry about dawdlers at the the table is

Mac and Cheese
steamed broccoli
meatballs in a sauce (or perhaps some meat leftover chopped up to top the mac and cheese)

We have swim team and scouts tonight (one child for each ). I've pulled out chicken breasts (frozen in BBQ sauce); I'll make Emeril's rice and probably steam some green beans frozen from our garden last fall. Monday is an "easy" night for us.

I'm still waiting for the replacement crockpot insert, broken just after Christmas...I really need it for making dinner on days where I have a really fast turnaround before swim team practice.

This sounds like something Mary Chris would make and it would be very yummy.

I'm not sure since I haven't looked at what I put on the menu for the week. Luckily, I know that one dish is tortollini with pink vodka sauce, a quick favorite around here.

Same here, so it's biscuits and chicken noodle soup. The fact that it's snowing here today makes some steaming hot soup a good comfort choice for the evening.

oh that sounds good Mary.. last week we had a pot of beans for dinner. I was thinking of alternating that and mac and cheese for mondays but I'm going to have to make more than 4 pounds of beans to make it 2 weeks between cooking.. I only got 3 meals out of that.

My 11 year old daughter got a cookbook for Christmas, so Monday nights are her nights to "cook!"

Apparently we are having pan-fried fish and baked macaroni and cheese...Sounds yummy!

(Prayers for a well-cooked meal would be cheerfully accepted!)

Lara, that's so awesome that you allow your daughter to cook! I'm sure a lot of you do that. That is one thing I have to start doing more of...cooking with my kids...so they can help out, as well as know how to cook when they're on their own!

We are having chili and cornbread. I divided up the year into 3-month seasons and wrote a seasonal menu for breakfast/lunch/dinner daily (as in Monday-Sunday). So we have the same thing (more or less) every day of the week, for a few months, then we switch. Helps me with shopping, cooking, storage, and not getting that 5 o'clock deer-in-the-headlights look when the kids ask "What's for dinner tonight, mom?"

I have to admit, though, chicken salad on croissants sounds prety yummy!

My daughter (just turned 13) has been cooking some meals for about a year. For awhile she was cooking about once a week, but we have strayed form that. I think we need to get back into that habit.

Why was Sunday's dinner frozen leftover lasagne and Monday's dinner a rib roast? Because I forgot to take the roast out of the freezer in time to thaw . But, luckily, my weeknight activities are light on Mondays so I have time. Just wish I had been able to save that lasagne for a busy weeeknight!

I would love to see that taco pie recipe. The link didn't work for me.
We are having Turkey(Thanksgiving)noodle soup and apple pie.
