I think I'd like to add this to our fall menu rotation, but can't find a recipe that gets rave reviews and that I can be assured will feed a large family. I thought I'd ask here before I started experimenting. Anyone have a recipe to share?

Hi Colleen,
I'm sorry to say that I don't have a recipe for Tamale Pie, but I did a search and found two well rated ones online. They don't average the very top score but many people rated them the top score. You probably already have seen them online, but I thought it was worth a shot :-)

[I always read the reviews/comments so I can see how others have tweaked the recipe or if someone hates it, why they do]

Wow, you were up early this morning posting, Colleen!

I do have a recipe for tamale pie that came from my MIL. My entire family loves it. This recipe has been doubled and fits in a 9 x 13 dish...

Quote:

Tamale Pie

2 pounds ground beef (I sometimes cut back to 1 pound and add more beans. )
2 cans red kidney beans
3 Tablespoon chili powder
1/2 teaspoon oregano
1/2 - 3/4 cup of chopped onion
4 cans tomato sauce
2 teaspoons salt
4 teaspoons flour mixed with a little cold water to make a paste (for thickening)

*use your favorite cornbread recipe for the cornbread topping, or use 4 boxes of Jiffy brand cornbread mix.

1. Brown meat and onion. Add spices, beans and tomato sauce. Warm on stove top and add flour and water to thicken. Add all to casserole dish.

2. Make cornbread according to package directions. Drop by spoonfuls onto the chili base.

3. Bake at 425 for as long as the cornbread package or your cornbread recipe calls for. The goal here is to cook the cornbread through - the chili base is already cooked.

It is great with a salad and is one of my family's favorite cool weather meals. I have substituted beans in varying proportions with this meal - sometimes eliminating the meat altogether and it performs just fine. So, it could make a very hearty meatless dish if you substituted enough beans (they need not all be kidney - I've used black beans, white northern, whatever I have on hand).

And...this is a similar recipe also from my MIL that I'm throwing out for you...

Quote:

Frito Pie

2 pounds ground beef (again - an easy meal to sub beans for meat)
1 - 2 med onions
2 garlic cloves

*brown all together in a pan

2 cans tomato sauce
2 cans kidney beans
1/2 teaspoon oregano
2 Tablespoons chili powder

*add to the cooked ground beef mixture

1 bag of Fritos
2 cups cheddar cheese

*Mix a couple of handfuls of fritos in with the cooked beef mix. Add to 9 x 13 casserole. Top with remaining fritos. Bake at 350 for 35 minutes. Remove and add cheese. Bake an additional 10 minutes.

yum

Thanks Jenn--That is exactly what I needed...cool weather comfort food that I could throw together early in the day and then pop in the oven quickly in the evening. I hate taking a recipe from a web site that says feeds a family. It usually is not quite the same as feeding MY family . But I really don't have much time to play...my meal planning has been lately and I need to get it together with reliable recipes to bring us into November TODAY. You're a lifesaver.

Jennifer - I'm going to put that first one on my menu for next week!

Colleen, I know what you mean about feeding a family. One day, My 13 year old was shopping with me, and he looked at a 'family size' can of Campbells soup and laughed!

I am definitely going to try a tamale pie soon - thanks, ladies! I just gave shepherd's pie a try for the first time this week and it was a huge hit, so this will be a great follow-up!

Thanks for the inspiration for dinner at our house tonight. I put on a pot of beans this morning to cook and 2 lbs of hamburger to thaw before we left for the day, and I was wondering what I was going to do with them. When I came home and peaked at the web page, there was dinner...already thought out for me. The kids loved it...I guess tamale pie is basically like shepherd's pie with cornbread and a lot more heat!

Peace and prayers.
