I am looking for an apple muffin recipe. I have a bunch of apples and it is my turn to make something for the children to eat after Liturgy and before catechism class. Thanks!!

Apple Cheddar Muffins (makes 4 dozen)

Ingredients:

6 cups of whole wheat flour
1 cup raw sugar
8 teaspoons baking powder
2 teaspoons salt
2 teaspoons ground cinnamon
4 cups grated cheese (This can be reduced to 2 cups)
4 eggs
2 cups apple juice (If there is no juice, mix one cup applesauce with one cup of water.
1 cup of melted butter, margarine or oil
4 cups of peeled and chopped apples

Directions:

Preheat oven to 350 degrees.

In large bowl, combine the flour, sugar, baking powder salt and cinnamon. Mix in the grated cheese and stir well to coat with the flour mixture. This will keep the cheese from clumping, and distribute it more evenly in the batter.

In a medium-sized bowl, crack and lightly beat the eggs. Add apple juice, melted butter and apples and stir until well-blended. Add to the flour mixture and stir until moistened (do not over-mix). The batter will be thick.

Lightly spray muffin tins, fill 3/4 full and bake for 20- 25 minutes (check after 20 min).

They do! When I bake, I always double-up and freeze half for quick breakfasts and lunches (which is why my recipes always make 4 dozen ). The recipe can be halved if you don't need so many.

Thanks Lori...one last thing, is that really 8 TABLESPOONS of baking powder? That seems like so much, I mean it is a half of a cup!
