I have never made a casserole. Hmmm...but I do broil/bbq salmon and tuna steaks. I like salmon teryaki (sp?)

Pasta/pizza
Veggie soup and grilled cheese
clam chowder (New England) and fresh bread
grilled veggie wraps
sushi/sashimi
egg salad
quesadilla
broiled flatfish (sole, flounder, fluke, etc.)
spaghetti squash (from the garden!!)
shrimp (broiled, cocktail, fajitas or kababed)

Black beans are a favorite.
In the winter it is soup and in the summer it is part of a salad.
The salad starts with the beans, a vinegarette heavy on the lime juice, some hot peppero sauce, corn kernals (grilled is great) and chopped veggies, whatever you have-tomatoes, peppers, onions . Serve with tortillas, hot sauce, grated cheese and sour cream. We really like lime juice so a few wedges are on the side too.

Our favorite in the summer is a fresh tomato salsa mixed with black beans, corn, and avocado. Very simple and really delish!

Black Bean Soup. Blend 1 can of black beans with a can of broth until it's smooth. Cook a chopped onion and a bit of garlic for 4 or 5 minutes in a large pan. Add in the blended bean mixture, a second can of beans, a jar of three-bean salsa, a bit of lime juice, and a bit of cumin. Boil then reduce heat to low and cover. Cook for about 25 to 30 minutes.

We serve it with dollops of plain fat-free yogurt on top and cornbread on the side.

The second is an easy night kind of meal. Just mash garbanzo beans with a fork and put some in a taco shell. Melt some shredded cheddar cheese on top and then dollops of three-bean salsa. We usually have it with some sort of tropical mix of orange juice.

Yum everyone! I thought Fridays were supposed to be a day of penance.   

We love beans here...black and pinto are our favorite kinds. Also any kind of salad. Sometimes I make real mac and cheese baked in the oven. Actually my kids eat anything...almost.   I want to learn to make some Indian dishes since our oldest dd was in India last summer and raved about the food.

I read in Salt, a (secular) book on the history of the stuff, that the meatless Fridays came about during a time when the Bishops controlled salt production . It would have been a double penance, considering the price one had to pay for salt, used as a preservative.

Hey, that's right! I forgot to add curry. Frankly, though, it's so inexpensive around here, and the Indians do it so well, that we usually send out for it.

Oh, and don't forget ceviche! I like it Peruvian style (my next door neighbors are Peruvian), made with a plain whitefish, or Yucatan style, made from fresh conche or squid.

Oh, you know...the "dark" ages, when the church controlled everything.    It's a very secular book (and not entirely for kids, as it includes descriptions ritual copulation sacrifices to some salt goddess in mesoAmerica), so I'd take any thing the author writes with a grain of...no. I won't say it.

Have you read "Cod"? (Similar type of book. My husband loved it.)

At our house, we specialize in pasta with clam sauce (sometimes with other seafood tossed in), lentil soup, salmon burgers (Costco!), gnocchi alla sorrentina (baked in tomato sauce and lots of yummy cheese), pasta with tuna in tomato sauce (good with black olives)...can you tell we lived in Italy for 5 years?!

Oh MacBeth I knew there was a reason we had a kindred spirit here . I grew up on casseroles <<gag>> and have shied away from them much to my husband's chagrin. Our favorites are:

Baked Halibut Steaks with carmelized onions
Seared Ahi Tuna with garlic and black pepper
Shrimp Pasta with anchovies, lemon and garlic
Ceasar Salad with either shrimp or as is
Teriyaki Salmon and Rice

These are always favorites at our house

We do a salad bar night too - salads, baked potatoes (sweet or regular) and toppings. I hate casseroles also. We grew up in WI. Honestly don't think there is a single recipe in our church cookbook without cream of mushroom soup. This is my problem with bulk cooking, which I wish I could do more of. All the books are full of casseroles. : p

It's next on my "fish book" list. I am finishing The Founding Fish, John McPhee's treatise on American shad. It's great, though it does have some "virile" humor that might not be appropriate for kids.

Another "history of food" book that I suggest (not necessarily recommend) is called A Mediterranean Feast. This is a very detailed (and VERY large) book about the Mediterranean cuisine. I don't know how accurate it is...I was fascinated by the author's approach, but he's a Arab Studies scholar and he's EXTREMELY biased towards Christians. Some of his statements made me so mad my dh made me put it aside when we were on a road trip.

That being said, I think it's an interesting read.

grilled peanut butter and banana sandwiches!

hard shell chili pepper tostadas spread with guacamole and topped with shredded mozzarella

cheddar and green onion omelets topped with green salsa

scrambled eggs in a tortilla with salsa

baked macaroni and cheese (I buy the Banquet family size entree and my kids LOVE it)

deviled eggs

peanut butter and a few squares of hershey's chocolate in a tortilla and warmed up in the microwave for a few seconds (I ate this for months on a daily basis after my last pregnancy - nursing an infant makes me waaaaayyyy too hungry; I don't have pregnancy cravings so much as nursing cravings )
