My little boys (4-7) love The Squire and the Scroll and The Errant Knight. Both stories have wonderful moral messages. I just realized you have older students, too, so I would suggest King Arthur and the Knights of the Round Table or Men of Iron by Howard Pyle. Not sure exactly what level you're looking for, so HTH.

For a great early reader you might want to try Minstrel in the Tower and The Sword in the Tree (early chapter books).
