I understand that Sundays don't count in the 40 days of fasting. My question is when does the breaking of the fast actually begin? Do you break your fast at sundown on Saturday until sundown on Sunday? Or do you stick strictly to all day Sunday.

Generally speaking it's sundown Saturday to midnight Sunday.

From the General Norms for the Liturgical Year and the Calendar

The liturgical day runs from midnight to midnight, but the observance of Sunday and solemnities begins with the evening of the preceding day.
