Does anyone have any suggestions for a children's bible or book of bible stories (Catholic) for the pre-k set that have really, truly nice illustrations?
The illustrations in the ones I have found so far are just so pitiful. They're either cartoon-y or they're nicely painted but with misshapen heads or disproportionate limbs, etc.
I know I'm being picky, but as a CM'er, I don't like to settle for shoddy work in our reading selections. And as a Catholic, I'd really like to find something with illustrations that will engage my children at least as much as their other storybooks...
I don't mind searching for oop print books if that's what I need to do.

I think at this age I tend to stick with single story books rather than a collection. Tomie de Paola for instance has some lovely books based on Bible stories and Saints.

Magnificat has come out with quite a few lovely books. I haven't seen this one but it looks nice (top of page) The Catholic Bible for Children. It does say it is for 6 and up but you can judge.

We have one of the Maite Roche board books of Bible stories, but I'd say they are more for the 2-young 3 crowd. Also, The Illustrated ones are neat but are comic book style. Pretty, though.
We have the My Big Book of Catholic BIble stories for my son to read on his own ( got it when he was 7) . Beautiful illlustrations but it uses Bible text so that may be too much for a preschooler.

We also have several Tomie De Paola books and they are wonderful.
The New Catholic Picture Bible is well done. And for your children, I think you'd enjoy The Gospel for Little Ones (this has been a favorite with the littler ones).
I have a few others, but am not in a position to grab them for reference, we'll do though, unless I see that someone else already linked them

We have the Bible for Little ones, not the Gospel as Chris V linked. I've wanted it. For my 4 year olds they are a little simple as far as text goes, but they/I love the illustrations. I think one tactic for using them, depending on how close to 4 your 3 year old is, would be to read through the story in the Bible and then tell them in your own words while they look at the pretty picture.

Out of print books that I recommend:
Little Stories about God by Mary Reynolds McDonald. These are written in a lovely fashion, and the pictures have not been duplicated anywhere. This is my favorite!
Maria Rioux has recommended the following 3. I have them, and love them, also.

I did want to add that "Little Stories about God" has a bit more than straight Bible stories.
Also, I wanted to add for this age, again not straight Bible stories, but some are incorporated is My Jesus and I by Bishop Morrow, which is a little booklet and you can also get a hanging wall chart, which is just a bigger version of the book. This is available through many places, like CHC, Seton, Our Lady of Victory, etc.
The Illustrations are absolutely positively beautiful!
At this age, I see the importance of helping the child love God, and understanding how much love He has for the child. You are establishing relationship with Christ. So New Testament is more important at the younger age, because it introduces Christ.
Reading aloud the actual passage from the Bible and then sharing the images is my favorite way. I do this especially during the Lent season, focusing on the Gospel of the day and finding images to match.
The Catechesis of the Good Shepherd approach really aims to present the Bible as God's Word unchanged or watered down. Just the label of "Bible stories" can be confusing as it puts the stories on the same level as the folk and fairy tales or made up stories that Daddy tells.
