I wasn't sure if this belonged here, or in the chat forum, but since it has to do with a feast day, I am posting it here.

I won't make the kids eat the peppers, but they will probably eat the rice. I'm using red peppers, since they are sweet.

Mama Margaret probably cooked Peperoni farciti à la Piemontaise (peppers stuffed with boiled rice), a speciality from Turin, for St. John Bosco's boys.

BELL PEPPERS STUFFED WITH RICE ITALIAN
STYLE

2 lg. bell peppers
1 1/2 c. tomato sauce
2 c. cooked brown rice
2 tbsp. chopped parsley
1/2 tsp. Italian seasoning

Cut peppers in half lengthwise; remove seeds and membranes. Steam pepper halves until cooked crisp-tender; set aside. Combine 1/2 cup tomato sauce with cooked brown rice, 1 tablespoon chopped parsley, and 1/2 teaspoon seasoning. Heat over moderate heat, stirring gently until well blended. Add a little water if need to prevent sticking. Spoon remaining tomato sauce into bottom of a 9 inch pie pan. Place pepper halves on top of sauce, then fill with rice mixture. Bake at 350 degrees until hot. Sprinkle with chopped parsley and serve. Serves 4.

That looks yummy, Ruth. We haven't done stuffed peppers in this house because *I* don't like the taste and later effects of bell peppers.

But has anyone tried doing it with a milder, like red or other color pepper? Does it work as well?

I'm not sure how the peppers would go over here either but I'll save it to try next year. This year we're having pizza since it's Italian (relatively!) & we're planning on 5:30 Mass so time is "squishy". Found a neat website for Italian desserts & decided to make Torte di Mele (apple cake) for dessert. Anybody have experience with putting a saint picture onto a cake?

Jenn, have you tried stuffed and baked tomatoes rather than the peppers? Mom used to pull that on us when we had an overabundance of tomatoes in the garden...

I use red, orange and yellow peppers all the time for stuffed peppers. They are great! Even my picky eaters will eat a bit of one of the colors.

Sorry about the two posts, I haven't quite figured out how to put two quotes in one response!

I put a holy card or picture printed from the internet, covered in clear contact paper right on top of the cake.
After our celebration I wipe off the back and store it for next year.

We celebrated this lovely feast yesterday (we are almost a day ahead) - this is my eldest son's school patron and we love him here!

We did nothing special except eat icecreams for the feast after dinner as I read aloud from The Forty Dreams of St John Bosco - dh and the children were captivated reading about Don Bosco's dream of seeing Dominic Savio and talking to him about the eternal truths and the state of his boy's souls.

This is a fabulous book for boys in particular - Jack has a lifetime enrollment in Don Bosco's association - so I tell him that when Don Bosco sees in his dreams his boys - past, present and future, that he is in them!

We read last night where Dominic reveals the three groups the boys are in - "Unconquered" - "Casulties" - "Overcome by Evil" - "Jack you are in one of those listings St John was looking at!"   "Wow" they all said!
