I would 2nd the buttermilk substitute as well, I'm not sure I could bake anything with true sour milk!!

Thanks for the recipe, Dawn. I'm planning on making it. Now, can someone tell me how I would know if it's "Irish" cheese or not? Are there particular names of Irish Cheese that I would ask for at the deli?

Kelly, I usually buy Dubliner Irish Cheddar or Kerrygold. Look in your grocer's cheese case, where all the imported cheeses are. There should be a few kinds from Ireland.
