Please share your ideas for First Holy Communion brunch or lunch ideas. The one I have so far is my SIL's Easter brunch: sausage egg breakfast casserole, fresh fruit, and broccoli salad (she had more but that's what I would make for us) plus my mom's wonderful Italian Creme Cake (made with five eggs, coconut, and lots of butter).

His big day is May 6, by the way.

My ds's First Holy Communion is the same day but at 5:00 mass. So we are having dinner. I think we will be serving his favorites.......salmon, flank steak. salad, fruit.....still working on the menu

Are you having people over afterwards? If so I would add a deli tray and bread/rolls, and a veggie tray.

We host a Mother's Day brunch every year and usually serve the same menu ~ boring but good

mimosas (or o.j. with raspberry seltzer for the little ones )
fruit salad with vanilla yogurt and granola on the side
scrambled eggs with cheese
bacon and ham
biscuits and honey or jam
cake (usually lemon)
coffee and tea

And congratulations on the upcoming big day! My middle ds will be making his next year (can't wait )

i went to a baptism brunch recently and she had a lovely menu:
quiche
muffins
pancakes for kids
fruit
yogurt and granola

can we get a recipe for that creme cake?

My Juliana will be making her's on May 7 at 9:00am!

I figured by the time we finished with Mass, short reception at the Church, pictures...it would be lunch time...

I was thinking of having watermelon, fruit salad a veggie tray, a deli tray and drinks...oh, and cake...maybe I'll do quiche and salad instead...oh well, Thank God there's time to plan!

And my 7yo dd is receiving her First Holy Communion on Saturday, May 6 too!

Since it's in the morning and we'll be gathering for a luncheon reception, I will most likely do deli trays with rolls, a few side salads (fruit salad?, brocolli salad?, pasta salad?), chips, and cake. Somehow, it seems like I do that for each First Communion, but with a large extended family and no time to prepare hot foods, it makes the reception do-able for me. This all depends on my sister-in-law, who has a son receiving his First Communion that weekend too. We are having a joint reception at my parents' house, so we still have to finalize plans together.

Congratulations to all the First Communicants. Thanks for all the great ideas. Guess I'll go with deli meat as I have four growing, hungry nephews attending the party afterwards.

Here's the cake recipe, Mary. My mom used to always make this for my brother Kent's birthday every year.

Italian Creme Cake

1/2 c. veg. oil
1 stick butter
2 c. sugar
5 eggs, separated
2 c. flour
1 tsp. baking soda
1/2 tsp. salt
1 c. buttermilk
2 c. flaked coconut
1 c. walnuts or pecans, chopped
1 tsp. vanilla

Filling:
1 stick butter
1 - 8 oz. pkg. cream cheese, softened
1 - 1 lb. box powdered sugar
1 tbsp. vanilla
1 c. walnuts or pecans, chopped

Cream oil, butter, and sugar. Add yolks one at a time, beating after each. Add dry ingredients and buttermilk [note: to make a substitute for buttermilk, add 1 tbsp. vinegar to regular milk to make 1 c. total milk, and let sit for a few minutes.] Stir in coconut and nuts.

Beat the egg whites in a separate bowl until stiff peaks form. Fold these into the cake batter.

Bake in three 9-inch round cake pans at 350 degrees for 30 minutes. (If you have two 9" and one 8", put the 8" layer on top.)

Mix all filling ingredients, spread between layers and on top.

Enjoy and don't count the calories, please.

Kelly, that recipe looks so yummy. We've used the Italian Cream Wedding Cake from Martha Stewart for my wedding and other celebrations, which is a bit similiar to yours. It's so yummy. Can you taste the coconut?

For our baptisms and FHC, we've made a delicious carrot cake with cream cheese icing. This one is over the top delicious. I like to have the creamy white icing cakes for those celebrations, as they reflect the "purity" of the soul.
